there seems to be no simple chinese touch 3G roms available , the dopod rom does not work on the htc

Do you mean wanna get a CHT rom rather then CHS ROM ?

Question How to add new language on Chinese version ?

Hello,
I use Chinese version (not the multi) and i would like to change language but impossible to add new language (French).
Someone know how to add language staying on official rom ?

My wife bought also Ultra 11 and I don't want to use non official TWRP (except if i'm wrong) and i don't want to update Rom for her all the time

You can always flash stock Chinese if you sell. This will remove any twrp or other files.
If you flash Global, updates are as regular as stable EU ROM, so nothing extra after first change. If you really want french, you have little options
