Your question should be, Where are the cupcake roms
If you want a regular cupcake then try the Xrom from Jac.

No, thats not possible. Donut, is 1.6. Cupcake, is 1.5.
And I suggest no one else help you, being that you can't even help support a dev by buying their app. There are plenty of working GPS applications, (including Google Maps) that works on 1.6 to 2.1

The problem is I dont understand it all... I see Radio this? RUU That? And its totally confused me.
I am looking to install 'Android Revolution HD' so any advice would be helpful.
I have written down my radio number just in case but as I said, its confused me so I dont know what to do.

You need to read and research so that these terms are not confusing.
Since you are on HBOOT 2.00, you need to check out the HTCDEV unlocking procedure at HTCDEV.com. Also you need to get familiar with using adb.exe and Fastboot.exe.
With the newer HTC ROMs, the days of a simple one-click root option are no longer available at the moment. An educated user you must become...

A great place to start is read the sticky posts in the forums.
Yes you can use Android Revolution but you will also need to use EXT4 recovery instead of CWM recovery as that is a requirement of the ROM.

yep, you can use android revolution. i used it but it got a little boring. if you like htc sense, try out a full sense 3/3.5 rom

"Best ROM" threads are banned on XDA. Read the Dev threads, see what appeals to you and try them out.

You can't know everything - but read first and you might find likely candidates. Otherwise you will have to accept a compromise, which is almost always necessary with Custom ROMs anyway.
As for 'minimum RAM consumption', you would be well advised to go and do some reading. 'Free RAM' is wasted RAM in Android. The OS knows how to use all the memory available and then free space if it is needed.
