Do the custom roms have "touchwiz" lag when using safestrap?

Ok so I know our at&t bootloader is locked so we can only install touchwiz based roms onto our S5.
How much faster are the custom roms than the stock rom? I aalready have safestrap installed but before reinstalling everything I want to know if theres a big difference in terms of the "touchwiz" lag.

Is there a difference between the Epsilon Project ROM and the Krypton ROM?

Both ROMs are stock based and have basic stock custom ROM scripts, init support, xposed, etc so is there much of a difference at all? Besides the minor differences like Krypton having more updated updated system apps are there any reasons to use one over the other?
