What are the benefits of OC/UV (particularly for CM7)?
I know of improved performance due to OC, but what does UV do in regards to performance. Also, how does an OC/UV kernel compare to one without the option?

You can do either or both but don't have to do both. At some point UVing will cause a crash. Right before that point it can cause performance issues. See the link below for instructions on how to find an optimal UV level to maximize battery savings and performance.

OCing improves speed but can also cause stability issues. For a captivate this usually isn't a problem until you get past 1.2 ghz. After that, it depends on the kernel but I have yet to find a kernel that is completely stable past 1.2 ghz under stressful conditions. Samsung designed the processor to handle 1.2 ghz and in theory it can go up to at least 1.6.
Like everyone before me has said, OC will make your processor work more (which will eat up more battery, and send the temps a bit higher).
UV is a way to "fix" that problem by controlling the voltage used by each Mhz/Ghz range. The mini guide that QuarkGluonSoup posted is a great way to start off.
Most Captivates start have random errors past 1.2Ghz, but the highest I've seen (stable) are 1.4Ghz.

Odd as it sounds, my battery life on CM7 is close to 50% better when it is OC'ed to 1.2 ghz and UV'ed than it was on the froyo ROMs under the same conditions.
That really is odd :S I think I'll try it myself.

It will be worse, but if you do UV it will last a bit longer...
Battery life will go down, but its by such a small amount, you wont even notice it(depending on how much you OC it)
and stable OC values will be different for every phone since all processors are not made equal. For example, my max stable overclock is at 1.2ghz, but my friend was stable at 1.4 with undervolting by 100.
You really just need to play around with it and find what works for you.
If you really want a solid stable number, im pretty sure every captivate I've seen can go up to atleast 1.2 ghz.

That is very untrue. I read an article (for the life of me can't find it) that overclocking is actually better for battery life. I have in fact had better results on my LG Optimus V with overclocking at 806mHz (highest stable clock setting) than with 600mHz (standard). LeslieAnn (Harmonia dev) linked to the aforementioned article in one of her posts. If I find the link I will post it.
I've only OC a couple of times but 1200Mhz should be stable for the majority of phones out there. The most I've got out of my phone was 1440Mhz on MIUI with Glitch kernel, while my friend was able to hit 1600Mhz with same rom and kernel. It took me quite a bit to figure out what voltages for what steps etc to get it to work well so if you do not feel like tinkering with it for a long while I wouldn't try to push your OC too high.
Battery life doesn't usually decrease unless you over volt. That being said most Galaxy S will get 1.2ghz-1.3ghz on stock voltage. Usually a good idea to undervolt most "steps" except the high clocks (1ghz+) but this varies on phone, rom, kernel, etc.

ohh... i thought that said undervolt... but over clocking as well will make it decrease some.
If you ran faster you would burn more energy in the same amount of time. (over clocking)
If you reduced the weight of your legs or gravity you would burn less energy. (under volting).
Most people dont notice battery drain when overclocked because the processor speed doesnt run full speed all the time. it governs to different speeds for what it needs to do.
go stock speed and play a game till it drops to a percentage.
recharge
overclock with NO undervolting and play the game again till the same percentage.
less time. guaranteed.
just sitting at the homescreen and flipping through your app drawer and using face book wont kick your phone into high gear, with stock or overclocking. you will never notice.

I have my phone and nook's clocking speed set at the same for min/max settings. I play a mean game of RUA and AirAttack HD. I've in fact timed my battery life on standard clock settings and my overclocking. While overclocked, my nook lasted 10 minutes longer than at standard speeds (while playing AirAttack HD, which has intense 3D graphics). And you might suggest I undervolted, but I never touch that stuff. My volting stays where it is.

I recently acquired a nook color and i am going to install cynogen mod 7.1 and google apps from clock work recovery method, but i want to overclcok to 1.2 or 1.3 ghz, i understand that cynogen mod has an overclock facility built in, the part i am not sure about is to reach 1.2 ghz or 1.3 ghz do i have to use dalingrin overclock kernel to achieve these speeds, or is it possible in cynogen mod 7.1 without the kernel.
Any info would be appreciated.

Dal's kernel has been included in there for a while now. If you use 7.1 stable to later nighlies you are definitely safe.

It appears the GPU may run best at 1200, even thou the CPU can do up to 1300.
It certainly seems to be true that going past 1200 can slow down graphic intensive operations. I am guessing that's probably because the graphics processor has to run at a ratio of the CPU and going past 1200 ends up with a lower graphics frequency.
But depending on the type of applications used there can be benefit in going higher and most Nooks seem to be capable of 1350. This can be seen in two different benchmarks. Quadrant gives significantly higher scores at 1350 than 1200 whilst the graphically more intensive Nenamark is slower at 1350 then 1200.
I ended up using 1200 anyway as it feels fast and probably also helps with battery life.
Check the voltage settings as well as these can normally be lowered a bit to help again with battery life. I use the one's originally quoted by Dal and don't have any stability issues. ( 09.25 / 1.05 / 1.2 / 1.275 / 1.325)
I did a comparison of 1200 and 1350 MHz with the Sunspider JavaScript bench. 1350 is faster but frankly I have a hard time telling the difference between even stock clock and 1350 in actual practical usage.
The most obvious speed boost I've found is running 16bit color. Big difference in browser scrolling performance.

From the standpoint that breathing in a metropolitan area is not fully safe, no it is not.
I use the stepper built-in to 7.1 stable and have never given it a second thought.
Try nook color tweaks.

I have run at 1200 / 1350 for the last 4 months and it has been stable and I have not seen any real detectable difference in battery performance or in how warm the device gets. The governor means that a lot of the time the Nook is running at lower clock speed anyway.
I don't recollect seeing any reports of damage on this forum to the Nook through over-clocking. Increasing voltages from the stock values on the other hand is probably not a good idea. There may possibly be longer term effects from overclocking but I'd guess the effect on lifetime is small enough that most people will have changed their device before it is significant.

Well, it's easy the higher you OC, the more it will drain your battery. As for UV, I can't tell because the voltages are different for every device, Rom and kernel...

Usually undervolting -50mv for each speed will work for most devices, although its not recommended to decrease that much for speeds below 800mhz since it will affect your phone's wake up speed.
And tegra 2 cpu controller only supports minimum of 770mv, going anyway lower than this value will not have any effect.
My advice, try UV -25mv for 500mhz, and the rest above is -50mv. Some o2x can go -100mv, but you need to be lucky to own such device.

Mine is working perfectly on -75.
But when i go to -100, soemtime freezes device, so i use -75 regularly.
trying -50 across the board now, seems to run stable.

I can't really explain clearly since I do not know the technicals, but from what I read in xda, it will affect your speed, meaning 1.2ghz running at undervolted setting will not run the same as at stock voltage. Maybe its an efficiency issue, I do not know.
I thing that i experience, If you undervolt too much the few lowest clock steppings, you sometimes might not able to wake the phone from sleep because there is not enough power to wake it up.
I hope my explanation help you a little, and hopefully someone with more experience can give you a better explanation.
using -25mv ate 1.1ghz and 1ghz, -50mv at 800 Mhz, and -100mhz (750Mhz so its 770mhz because hardware limitations) on all other frequencies!
-50 mv is the limit for the device don't use below -50mv. but it dependes on your device. mine cannot UV it always gives me SOD i think my hardware phone is crap

I have one of the 10 first phones sold in Sweden and I cannot undervolt mine at all.
Just wondering if there's any correlation between manufacturing time and UVability (yeah I just made that word up).

The stability is dependant on your hardware; some chips can only overclock to 1500Mhz and some can overclock all the way to 1900Mhz. It is not something the kernel has a say over.
Don't all of the notes have the same cpu? Why can some be overclocked and others not?

They all can be overclocked, but how much is a different thing altogether. It's quite simple really, not every chip manufactured is of equal quality; some chips have more imperfections. The more imperfections the less it can be overclocked before it becomes unstable. It's the same thing as on PCs, too.
Stable is it when you do nothing and use it in originally form. Overcklocking need more Power more power is less time you enjoj your note!
Generally these chips are made to tolerate a certain speed, and because of variability, the manufacturer drops the speed tolerance to ensure overall quality. Some will still be able to manage 1500, 1700, or even 1900 (although rarely, I'd say). Just about all of them tolerate 1400, so very few are defective at the stated tolerance. With 5 million, you will get a few, however.
This is one of those rare occasions when statistics have a benefit in the real world!

There are many out there that will let you overclock. Search the Android development forum.
Like most, I have flashed heaps of times, probably at least four or five times a week when I first got this wonderful Note, but in the last month or so have only been tempted to stray three or four times. Personally Franco 6 is best for me, because I favour battery life and stability rather than overclocking (1400MHz is not bad as a standard!!)
I would encourage you to try a few for a few days, as long as you backup often you should have a great experience!

Stock kernel isn't capable of overclocking.
One way to tell is to download things like SetCPU which detects the range of the clockspeed. Another way is to simply read the description of the kernel thread.
How high your phone can go is an individual thing. You need to overclock in slight increments (say 50mhz at a time) and run a stability test to see if the phone crashes or not.
You DO NOT pull the slider all the way to 1.9 ghz and "see" if anything happens. If you fry your CPU, do not come to us for help.
This is why I don't like overclocking, it's a waste of time to run the stability tests, etc.
In summary, you need to raise it a little bit, and run stability tests and repeat the process until your phone crashes. At that point, you'd know the last safe-stable clockspeed that your CPU can take.

What do you recommend for a good stability test?
I'm on franco.kernel v10 and OC to 1600 using Tegrak. Tegrak runs the stability tests automatically and reverts to stock 1400 if unstable or a reboot occurs.
I tried 1700 but Note rebooted after about 2 minutes. Booted right back up at 1400 with no problems. Re-set to 1600 and running smoothly.

Yes you can, depending on the kernel you use, oc your phone even up to 1.5 ghz.
Flash Glitch, MNICS, Devil or Semaphore Kernel for ICS roms
Do so with care as OCing WILL degrade your processor faster.

Processors aren't all the same (variance in quality during manufacturing), the 1 ghz that is the default is considered a 'safe' level and every processor will be able to do that frequency. Usually though, there's a fair amount of buffer, so most processors can go beyond 1ghz to say 1.2 without any issue.
As the frequency increases, stability decreases. This means your phone will become more prone to crashing. Some people are lucky and can go very high (1.5, 1.7?), while others might start facing instability at 1.2. Won't know until you try. It's unlikely to cause permanent damage anyway, just change back to 1.0 if it's unstable
It probably does increase wear and tear of processor somewhat, but considering people will buy a new phone within 1-2 years, there's really no problem

I Have "[email protected]" Kernel Up to 1.3Ghz, I Don't face any problems When i OC to 1.2GHz,, Games run smooth (Real racing 2) And the phone is Very responsive,, But when i play about 2 Hours My phone's temperatur increase (Just a Little Bit) but i don't know if it may Effect my Phone's Life,,

Being electronics' worst enemy, heat can and will kill your phone. But that's only if it reaches those temperatures. Overclocking your phone naturally will increase heat from the processor. Check your phones temperature. If you're reaching 50C or over, you're getting too hot. The general rule of thumb is this: if it's uncomfortable to the touch, your phone is too hot.
Most phones should get to 1.2 GHz without a problem. Keep in mind that LiveOC is NOT THE SAME as adding another frequency step, which was the traditional way of overclocking. Some kernels do one, some do the other, and some do both. Adding an additional frequency step to get to 1.2 GHz should be capable by most if not all phones. LiveOCing to 1.2 GHz won't be nearly as compatible, as it overclocks the bus, GPU and CPU.
