I will just answer the first part of your query : to delete stock application, if your phone is rooted you can use Titanium backup but don't forget to backup your app in case something goes wrong

1. Open Root Explorer
2. Look up for System
3. Look up for Apps
3. Find the message.apk or whatever is it called but be sure it has the .apk extension
4. Before you delete it do a backup.
If this helped you please hit the "Thanks" button.

Hi, Daneshm90, nice to see you here. I guess he has root, since both apps require root to run.
It's strange, because I use rootexplorer and I am able to delete the unwanted apps. however, I noted that if you boot into recovery, there are some messages saying installing default apk files (?) before the recovery screen came up.
Not sure if the recovery is restoring these apps.

Since you are uninstalling default stock apps, anyway your warranty is going to void. Then why not install custom rom which doesn't have any of these bloatwares.
You could find one in development section.
ANDRO-ID v3.3 RC2 is the stable custom rom release till now.
If you want to remove only few specific apps and retain others which are absent in current Andro-id release then wait for few days, I will post a "how-to-build custom rom from stock " soon. Then you can remove any apps that you want add any apps / ui launcher as default system launcher.

Oh..? That's odd.... try installing another app that needs root permissions to make sure you have root. If you don't, I used superoneclick to root. Also try other apps to uninstall bloatware

Use titanium backup to selectively restore apps data that you want. but it would be better to have complete wipe before installing custom rom.

I'm not too sure myself but for a start, can you copy the files
Livewallpapers.apk
Livewallpapers.odex
Livewallpaperspicker.apk
Livewallpaperspicker.odex
from your /system/app folder and email them to me ([email protected])/post them here?
you'll probably need root explorer or something similar to do that!
thanks a lot for the effort

I use CM7#20 and i miss some stock apps like pc sync, memo, contact etc. got stock apps somewhere an try to install it, but not succed. is there any way to do this?
edit:
One little question.
Can install apk that belong to stock rom to cm7? IMO, it's all just the same, because before I upgrade to cm7, I do a backup using Titanium and restore it again in cm7 and I can restore almost all of it, just system apps like pc sync, memo, contact, etc (continue on showing "restoring data bla bla bla").
I installed a ROM that does not have stock memo, can someone give me a TB backup of stock memo, or give me memo.apk?
I googled some memo.apk, paste it in system/app ad reboot, but it's not working.
Which ROM are you using ?? And did you change the permissions to rw-r--r-- after placing the app in /system/app ??

if you dont have stock memo, you can install color note
if your rom is have access superuser, install root explorer and then copy in system/app dont forget to permission : rw-r--r--
Doesnt root install superuser? so all roms will have access to SU..
I'm using Stocklite v6, and root explorer to paste the memo.apk in system/app

What's your problem? You can read above what to do... Paste memo.apk to system/app and set permissions, than reboot.
Or install color note, IMO it's much better than stock memo.

It will not work 100%!
You are just wasting your time.
All data gets lost if you don't back up when you do a factory reset in Clockworkmod when you flash a rom!

Firstly make sure the internet.apk is compatible to your os. I mean if you put the Internet.apk for ICS in Gingerbread it wouldn't work. Secondly you have to paste it in /system/app and not /system/apk. Thirdly the permission is rwx,r-x,--x. After this reboot you device. That ought to do it

its compatible with my os as i have taken backup before uninstalling,
and its was mistake, i pasted it in /system/app only not apk.
If you have already taken the backup before uninstalling, you just have to restore it. Its as simple as that. What kind of a back up did you take- Titanium Backup or CWM?
