indeed most of the first minimcm okay
GingerXperiaRay v4 or official CM7
For off. CM7 flash the FXP kernel first, then nAa 10.

I would like to install latest FroyoPro v2.5 but I'm not sure what kernel should I use. There is a three versions of Alfs v8:
X8_v08a-cm7_Alfs&djnilse.zip
X8_08a-GDX-no_fps_cap_Alfs&Djnilse.rar
X8_08a-GDX_Alfs&Djnilse.rar
Should I use CM7 version, of one of the GDX?
Gdx! Sorry

Let's put it this way, there isn't any best ICS ROM, all have their own benefits/drawbacks. My preference is MiniCM9 though.

No. It's for Xperia Mini, Mini Pro and LWW.
but it can be ported rit cos it uses the stock kernel?
It's not for X8.
Yes, ICS support stock kernel but not for X8's stock kernel.

Well, you should know that every device has different kernel.
Galaxy Nexus's stock kernel is 3.x.x kernel, it runs JB on top of it's stock kernel. Do you think that it means that we can run JB on our stock kernel? No.
There are a ICS rom for stock kernel pasan. but it has many bugs and laggy
Our x8's stock kernel don't fully support ics or jelly beans......
