There's full ls7 leak which is a stock 4.2.1 leak Touchwizz in development section. Comes with rooted phillz kernel in case of unsafe stock. You need to flash in cwm. I'm on it, very stable, no issues at all.
There are no official releases yet that can be flashed via pc odin.
To unroot just flash stock rom with pc Odin.
Don't know about unlocking, someone else will have to help.

Note: you flash at your own risk! There are no guarantees!
The accepted route is to flash xxjvu (although I went from jw4). It is important to avoid going straight to JB. First, flash an ICS rom. Then flash a JB rom. On the Slimrom site it suggests flashing cm9 http://slimroms.net/index.php/installation/slim-bean and then Slim Bean.
I went from 2.3.6 jw4 to RemICS-UX (ICS) and then to Remics-JB (JB). Choice of custom rom is very much a matter of taste, and my current rom is in fact based on Slim Bean.
From what I've read, the gt-i9000 is pretty resilient. And if things go wrong, one can usually recover by flashing a gb or stock rom with odin.

You can flash directly on top of Gingerbread..no need to be on ICS to flash JB..
Official gingerbread rom is safe for flashing
Don't do it from leaked roms, tho

10.2.1 is very good in daily use and stable, but I can recommend Mackay ICS 1.7. IMO the fastest build for our SGS. It miss some unique features from Android Jelly Bean but works a bit smoother.
Every time I downgrade version of Android I flash 2.3.6 JVZ by Odin, then CF-Root. Finally I install clean build by CWM. No problems so far.

I have CM11.0, works great on my old Galaxy S.
I think 4.4 is more adapted to small memory devices then 4.3
Never tried CM 10, but CM11M6-CM11M8 is faster / more stable then any stockrom I had. Feels like a new device.
IMHO Updating GB 2.3.6 to CM11.0 M8 is a no brainer.

Hi there, a few months ago I flashed a custom ROM and switched from the stock 4.1.2 to the CarbonRom 4.4.4, my phone is a Samsung Galaxy S Advance
Now I'm having lags with it and I want to return to the stock ROM or install a JellyBean based ROM.
I read that it's not possible to install the ROM directly because I need to downgrade first, but I don't know where to start... is there a guide out there?
I tried searching on google and I read that it's not possible to downgrade because of bootloader things... Can someone help me?
Thanks in advance
You don't need to downgrade.
You can directly install stock Jelly Bean firmware using Odin.
You can install a Jelly Bean based rom using CarbonRom recovery. If the Jelly Bean based rom doesn't include a kernel, you also need to install a Jelly Bean kernel (like CoCore).
Personally I think there's no need to revert back to the slow Jelly Bean. I'm using this rom http://forum.xda-developers.com/galaxy-s-advance/general/rom-modded-cyanogenmod-11-t3387424 for three weeks now with no problems, it's better than CarbonRom.
