Yes, you can. Just install CWM and flash the ROM you like.

I want to flash cyanogenmod 11 android 4.4 on my htc one m7 (gsm). I am not sure what gapps I should flash and can anybody recommend any non sense based roms.

You always have to flash gapps that match your version, simple as that. You can download them from goo.im or from cyanogenmod wiki http://wiki.cyanogenmod.org/w/Google_Apps or from the cyanogenmod thread for the htc one http://forum.xda-developers.com/showthread.php?t=2579229
Regarding the rom recommendation, you'll have to test which one you prefer yourself. You could go either with a GPE rom or any AOSP rom

Quick questions:
1) Can I install the viperone custom rom on an HTC One Mini 2?
If yes, which version would you recommend?
If no, which custom rom would you recommend which largely retains the stock look?
I'm currently running Android 4.4.2, Sense 6-0
Softare: 2.19.401.2
The phone is rooted and TWRP is installed.

There is no Viperone Rom for the One Mini 2. There is a stock rom in the thread but it is of an older software version.
Since it isn't a popular phone, there is hardly any development for it. So you are kinda out of luck when comes to using custom roms

Return HTC One M7 from google play edition to aosp or sense...

Hello, I hope this is the right section... my girlfriend has an old HTC one m7 which used to be mine and I gave it to her converted to google play edition with Lollipop 5.1, the phone is not rooted.
I did this years ago so I don't remember the specific HTC one procedures (I was coming from a samsung back then) but I converted an unlocked tmobile htc one lte to google play edition.
I'm now looking to update this phone to Nougat, especifically crdroid nougat which is aosp/lineage os-based.
I would also like to know how to return to sense if possible.
What would the steps necessary for this be? Do I have to convert the google play edition back to a normal htc one in order to install aosp roms or sense roms?

if your phone is running the latest gpe firmware, simply flash twrp and your aosp rom. You don't want to flash the sense firmware back since the nougat roms work better with the gpe firmware.
