You can use the roms available in the HTC One dev forum.... they're fine with your ATT device

Yes, the roms are more about the phone then the carrier. I have sprint and can install any of the limited new roms available for the HTC One at this time since the phone was just released. There will be a megatude of custom ROMs available for this phone. You fine here.

Today I updated to Sense 6 on my Verizon HTC One M7 with S-Off and unlocked bootloader and now when I unlock the phone it shows a message saying Unauthorized Device: This app is not compatible with your device.
I tried talking to HTC but they couldnt fix it.

sorry mate my bad, i meant verizon. both sprint and verizon htc one are different from the gsm htc one variant and have their specific forum. This forum here is for the htc one M7_UL or M7_U gsm variant.

The at&t m7 is the same variant as the standard M7, it's M7_UL. So yes you'll be able to install rom from this forum without problems.
