So I haven't seen this mentioned anywhere through extensive searching, so excuse me if this has been asked before. Simply put: can I go S-OFF if I have a custom ROM installed? One that isn't Sense based? There's talk about newer firmware not working for S-OFF, and from what I understand, you firmware depends on your ROM. I currently have MIUI installed, which doesn't have the Sense firmware that I've seen mentioned. Can I try and go S-OFF with this ROM installed or do I have to install stock/another Sense based ROM?
Yes you can S-off from standard or custom ROM. Although you would unlikely be able try/install a custom ROM without S-off...
Just try it out:

Awesome, thank you. I installed a custom recovery (and thus a custom ROM) easily enough without S-OFF, so I wasn't sure. Thanks for the help!

All you need to flash a custom rom is to be bootloader unlocked and custom recovery installed..... s-off is not required
Also Roms do not contain any firmware. This is why you're on a 4.2.2 ROM without the new hboot, and still able to s off.

How did you root and S-OFF? Did you use Revolutionary?
If so, then no you won't be able to run and install an official HTC release, but there are plenty of custom ROMs in the Development section.
Yes I used revolutionary.
I'm looking for a flat ROM like original because each modded rom add some features and tweaks so is far from original and contain bugs or unwanted features.
If you want to brick your phone you can install it.
The best rom install is http://forum.xda-developers.com/showthread.php?t=1756500
this link takes you to the rom, its the offical RUU.
It still allows you to still install other ROMs if you ever choose to.
Try ARHD 3.0. It's as close to stock as can be, rooted, and me & other users on the forum are running on revolutionary hBoot 6.xx. check my signature.

I also have rooted IncS with S-off with latest blackrose hboot and CWM recovery.. and last night I installed the official rom without loosing root and recovery.
You simply have to get the latest official rom "RUU_VIVO_ICS_35_S_HTC_WWE_4.10.405.1_Radio_20.74.3 0.0833U_3831.18.00.11_M_release_266013_signed.exe" and follow the steps mentioned in http://forum.xda-developers.com/showpost.php?p=18079795&postcount=1

You can unlock and install the ROM.
You might want to S-Off with revone, after the official update you won't be able to.

S-off unlocks ALL security on your phone, which can be dangerous if not done wisely. Read the Revone and Moonshine threads in the original development forums. HTC let's you do a lot without S-off: you can unlock, flash rooms, custom kernels, radios and mods. S-off gives you complete control, like flashing custom splash screens and unsigned firmware. Viper one will install and run well if you staye 4.12 and S-on, just unlock, flash custom recovery, and you are good to go...

Apart from all the other stuff mentioned above, it will allow you to go back to "locked" bootloader instead of "relocked", which may or may not have warranty implications.
I have S-on, custom recovery and unlocked boot loader on my m7. I changed providers to T Mobile from ATT. I would like to get the WiFi calling features, etc but so far have been unable to flash a T Mobile RUU. I assume because the CID is an AT&T one. I have attempted to S-off the device (1.56 boot loader) in order to change the CID, it failed. Any advice for getting the device onto the stock t mobile Rom?

Have you tried rumrunner and firewater they are supposed to work on 1.5X hboot. Read through both of their threads to see what others have done to achieve S-Off. Without S-Off, I don't think you will be able to change.

Thanks I have read both and tried both methods without any luck. I installed the viperrom but still don't see any options for WiFi calling. Maybe that is CID dependent as well

I don't think WiFi-calling has been implemented in Sense 6 custom roms except for stock T-Mobile. AHRD has v36.1 and SkyDragon has v20 which is KK with Sense 5.5. I had a thought, if you could return to stock AT&T using an older RUU which would have a lower hboot. Then you could try to get S-Off. It is the round about way to do it but it might work. One note the RUU you are going to flash/run has to have an hboot equal to or lower than its hboot. nkk71's SuperGUIDE to returning 100% back to stock has a lot of information and links on how to accomplish it.

That is a great idea. I had semi-attempted that but did not put as much effort into it as I should have. I will definitely try that. But I am wary that to downgrade I will still need super CID and s-off.

@dave328
Well, downgrading require S-OFF
so you can't downgrade to achieve s-off
http://forum.xda-developers.com/showpost.php?p=49832723&postcount=388
with S-ON you can only flash signed firmware and ruu with same or higher version
Sorry I lead you wrong, @alray is correct. Here is something I found in @nkk71 thread under "Not so FAQ #2". It explains a lot.

InsertCoin has working T-mobile wifi calling on sense 6...
at least their 2.xx versions, I have not tested 3.0 yet, but I read it's in there.

Could I do a nandroid restore of a T-mobile Rom that had earlier h-boot? Or at least to get onto stock t-mobile software with the nandroid?

once you have a custom recovery (like TWRP), you can make a nandroid of your stock rom. Then you can try out any of the other roms of your choosing and aways restore your nandroid if you don't like them.
You may be able to also restore an old backup, but if it was made with a different recovery, it doesn't always work.

Thanks. I would need to find a stock T-Mobile HTC One Rom made with TWRP or CWM. I can switch recoveries easily enough. Maybe that could work. Any idea where I could find a nandroid zip file like that?
check the development section of the forum. there are a couple of threads that have stock roms in .zip format to flash in TWRP or CWM
for example:

Hey there I am rooted unlocked s-off. Firewater will not work on my device so I decided to go ahead and try sunshine.
It seems no matter what rom I'm running, sunshine says I cannot use it and I need to flash a stock based sense rom. I am still on 4.4.2.
I can not for the life of me figure out what rom to flash to get it to work. Is there a rom I can flash thru recovery, a stock rom, that will get it to work?
Or do I have to relock it and flash a sprint stock rom (which I can not find a 1.54 base rom that is stock). I am hoping that there is a stock rom thats custom recovery flash able. Any help would be appreciated. Thanks
You say you are rooted unlocked s-off... so I don't see why you need to use firewater or sunshine...

I meant to say s-on. Firewater won't work on my device
Install one of the stock backups from the thread below. Also, Captain Throwback has stock rooted ROM's over on the MikMik.

Short answer...no you don't need to be s-off.
Long answer... most newer roms require your firmware to be updated to the latest for everything to work correctly, with s-off it's a lot easier to update your firmware then it is when you are s-on.
Hi. Any example of a rom to flash without s off?? Many thanks.!
You can flash ANY ROM without having to be S-off.
