Wondering if it's possible to use the sense 5.5 camera and gallery on a sense 5 Rom. What files would I need to transfer? Is this even possible?

none
You can try, the worst that can happen is Camera will force close, which means it will not work. Just remove the Camera.apk from the 5.5 ROM and drop in the APK from the other ROM, very simple process.
I believe it is the GalleryGoogle.apk.
Yea I tried that and it force closed. Would the Rom being odexed matter?

Yeah maybe, being Odexed I know you can't add any mods to that rom.

Yep it cranks pretty nicely, though I'm having problems with Music FX which keeps force closing, I'll have to install DSP Manager later on.

If you are using CM10, you can try the 4.2 gapps package in the I9000 theme and apps area.

Probably you did something wrong somewhere during the flashing.
4.2 Camera works fine on my phone running JB Custom Rom based on CM sources.

Yeah the 4.2 apps worked for me too when I tried them (rolled back to 4.1). Make sure you have sufficient space on your /system partition before flashing, otherwise some of the library files might not be able to move over and you will get force closes.
This package includes the camera and a sort of things of the 4.2 http://forum.xda-developers.com/showthread.php?t=1991734
i load a android 4.1 to 4.2 cwm flash zip from xda i belive it was for galaxy nexus and extract the googlegallery and put it in my system >app with permissions rw-r-r its working very well

No Sense 5 roms have tablet mode.
And in light of the Sense ROMs not having tablet mode, I would recommend ViperROM.

I second the ViperRom recommendation.
You can create tablet mode yourself on any rom by installing Xposed and then changing the dpi settings.

Read through this

Then look up the dpi module and install it, activate, and then you can set the dpi per app.
