You try rumrunner then firewater. I would recommend reading thru the threads to get an idea what works and what doesn't. You will probably have to change roms to something more closer to stock rom than miui. The quickest way is with sunshine but it will cost $25. It too works better with roms that are closer to stock.
FYI: TWRP is a custom recovery; hboot 1.55 is your bootloader

Which ROM would you recommend?
And then the best way would be an ubuntu clean livecd / usb installation for android purposes?

FWIW, I just used Sunshine this morning and it worked great. I have S-Off'd many M7's, but this one was being stubborn. It was worth the $25 IMO. For Hboot 1.55, I would install an older ARHD rom (4.4.2) and then flash bulletproof kernel for that firmware. Then use Rumrunner or Firewater. That ALWAYS worked for me on the older 1.55 hboot.

Many have had success with AHRD 53.0 or 62.0 and Bulletproof Kernel. See @sjorge3442 post about his personal experiences. You can use Ubuntu USB, there is no need to install Ubuntu.

I would like to flash with sunshine, so I can flash ARHD 53 and use it? I tried with miui but the compatibility check failed.
My main reason to switch the ROM again are Keyboard problems......I am searching an GPE like ROM with a few fixes and tweaks. Maybe you can recommend a ROM where I don't need to S-OFF.
I really like to update as soon as possible to Android L.

Everything worked well. Now I will try insertcoin and viperone.

Make sure you have root access and use Rumrunner s-off tool. If it fail to acheive s-off, flash the custom rom ARHD 31.6 and try rumrunner again (arhd 31.6 should have everything pre-installed to make rumrunner works i.e. root and unsecured kernel). then with s-off you will be able to run the dev edition ruu to restore your phone to stock firmware and still having s-off and possiblity to update ota to 4.06.1540.3
Yea!

Currently I have an M7 UL on 4.4.2 with Sense 5.5. Its rooted and the bootloader is HTC Dev unlocked. I tried to S-OFF with firewater but I keep getting infinite lines so I gave up and I'm still S-ON
I'm not really bothered about the S-OFF anymore but would like to remove the ***TAMPERED*** bit thats there.
Also I have a few questions:
1) As I didn't try to do anything else my phone should be fine, right?
2) I want to install the ElementalX Kernel, Is it possible with S-OFF?
3) Can I still update using OTA's?
4) What are the methods to revert completely to stock with no root or unlock?
Since I'm new I hope you can help me with these questions. Thanks.

It's 1.56
try different roms and different kernals to get s-off, some people get it on stock, others don't, some have reported first try, other say they had to flash 10 different rom and kernel combinations.
Myself, I did it in one swift move by java card which I had to pay for.
I currently have my M7 unlocked and rooted, now fancy a try at getting s-off for my M7.
I am currently running the latest Insertcoin rom with the default kernel that comes with it. I've currently tried Rumrunner and Revone that come with the Tookkit from Squabbi but both fail. I am assuming this is because 1.57 is a tricky one to gain s-off.
Anyone had any luck with this verson and running Insertcoin?
Thank you.

With that hboot your best free chance of S-OFF is firewater. I don't know about that combination but you can search the thread and see if someone has made it. It seems each phone is different and what works for one doesn't work for another. If you get the "whelps this sucks..." message then you will need to use sunshine but it cost $25.
Ok, tried the Firewater method, first bottle chugs then I am informed my kernel contains an anti firewater patch. So, I googled around and it shows Elemental as being firewater friendly. I flashed this kernel, tried Firewater and I get the same results.
I am running the latest ARHD and obviously now the Elemental kernel.
Thanks.

use an older rom + bulletproof
you can also check here for more info: http://forum.xda-developers.com/showthread.php?t=2632351
if you are already on firmware 6.xx, then most likely firewater will fail anyway (even without giving you the "whelp this sucks" message)
Older rom, as in perhaps a Jellybean rom? Sense or aosp?
Yep, on a 6.09 build number.
Thanks.
I tried many different ways to get s-off on HBoot 1.57. All failed.
Only option working is SunShine, which costs me USD$25.
But it is surely fast and effective.
Check your emmc chipset. If it begins with 9001, you won't be able to s-off without Sunshine - if it's any other you should be fine. I managed to s-off with OnePlus One CyanogenMod 11S rom.

Flashing a rom will not change hboot version. To use revone, you must have root access, an unsecured kernel and a rom that match your firmware version. Thats why I suggested you to flash ARHD 31.6. Then try revone again.

Edit: It started to go horribly wrong, but managed to get it working. It seems the ARHD and others were not being copied over properly when using the sideload feature in the All-In-One toolkit. It kept saying

If you flash in twrp you need to flash the boot.img in fastboot in order to boot because your s-on. And also what you are running I believe are gsm based roms. In which case they will never boot.

By flashing it your partitions are messed up now.
You will need to RUU to fix and stay in the Sprint section when choosing a rom.

Yep says it several times in the OP.
I can't seem to get any other ROM to boot except CyanogenMod and LiquidSmooth. CM is completely stable while the latest version of LS is a bit buggy. They both absolutely refuse to acceept any APN settings. I am using Ting's service right now and I can't use it on these ROMs.... I tried flashing several stock Sprint ROMs for the HTC Onr M7 and none of them will boot. They'll boot if I flash the boot.img like someone here suggested but it doesn't help. It will go to the desktop, however, the screen is completely black. Is there anyway to flash a stock ROM properly? RUU's don't work either.

My HTC One is CDMA (Sprint).
First try updating by going to Settings ---> About ---> Software Updates. If that doesn't work try the following:
This Lollipop update process is ONLY for the Sprint HTC One M7.
First flash the firmware via Fastboot: 6.16.651.2_firmware.zip >>> https://www.androidfilehost.com/?fid=95916177934523626
And then install the RUU for 6.16.651.2 via Bootloader RUU Menu:
http://dl3.htc.com/application/RUU_..._NV_SPCS_4.38_003_release_414036_signed_2.exe
If you don't know how to do these things, then you shouldn't attempt to. You could end up hard-bricking your phone.

It has been a little bit difficult to S-off my HTC, since it has Hboot 1.57. So far I've tried Revone and Rum Runner without success.
Firewater seems to be down and I'm tempted to pay for SunShine, but I'm not really sure about paying for an application that might not work.
My HTC originally came with Android 4.4.2 and I got a notification to upgrade to lollipop via OTA, but I was suggested to make a backup just in case. So I had to root my phone, unlocked the bootloader and installed TWRP in order to get my system backup, but due to the previous procedures I can no longer upgrade to lollipop.
Right now all I want is to follow my original plan by installing a stock rom and try to update to lollipop via OTA.
You kindly suggested me to s-off my cellphone, but I've seen some videos on youtube in which they install stock roms with s-on:
