So I would like to be able to put my headphones in, hit play and have it auto start a specific app (like spotify or even a different music player). I haven't been able to figure out how to this yet. Can anyone put me in the right direction. For some reason it always loads the default music app on the phone.
Have you found the solution for this yet? I am currently looking for one.

I recently installed the "Listen" app to listen to podcasts. When i plug in the stock headphones that come with the Captivate and then click the mic button on it, it will bring up & control the media player playback instead of Listen. Is there a way to configure the behavior of this button? Is there a way to keep it from bringing up the Media Player app and instead control the Listen app?

I've been having the same issue. I installed winamp, but I get the same thing.
I installed doubleTwist, and it looks like it properly takes over button so that the stock music player app is no longer launched. Does this mean Listen is not doing it right?
I can't seem to figure out how to control music playing on my phone from my watch (using Google Music phone app). Is something supposed to pop up when I play music on my phone? I don't see an "app" on the watch that controls this. Note that I'm using a Note 3.
What am I missing?

You get card of current song and if u swipe to left u can advance and swipe to right one more time to stop I believe.

Actually I figured this out. You have to start the playback on the phone first. Then you get a notification that let's you pause / play, Swipe to the left and you next and once more to the left you get previous, but that is the extent of the stock music control. This worked with EVERY music player I have, not just Google stock Music player.
You can also control volume if you get the Wear Volume app - it appears as an additional notification card under the main music notification. And here is also something that is WAY cool - if you download musiXmatch app, you can scroll down and choose to display scrolling LYRICS to the current song!! I can't get BOTH volume AND lyrics to work at the same time however. Note the Volume works with any music app you choose in it's settings. However, musiXmatch only works with Google Play Music player.
There are also some voice controls to start playback. Such as OK Google, play me some music (that will start an "I'm feeling lucky" shuffle). OK Google, Play Some *artist name* . there are some others, but I use those two often.
Not sure if it matters, but this is on an HTC One M7, stock 4.4.2 Sense 6, Google Play Music.

I have not been able to find any way to control the Google Music or any other application from the watch. I was expecting not being able only to launch the music application from it, but also to control the volume or to switch the song.
I have found in Google Play Store applications like this (trial and then allow you to purchase the license):

If there is no native way to do this, i really cannot understand as i see this one of the most logical applications to use from the watch.

You can play, pause, skip forward and back tracks with the Google Play Music app and Android Wear directly.
When playing music it should automatically display on the watch.
If not, check and make sure you haven't muted the app.
Music Boss works for most players.

I haven't muted the application. The strange thing is that just in the moment i hit the play button from the phone (Sony Xperia Z3 with Android KitKat 4.4.4) the notification for the music appears, but hides immediately. Maybe its an issue from my phone.

I'm trying to determine the benefit of Music Boss. I have used it with the 3 main audio apps I tend to use, all of which notify to my watch (TuneIn Pro, Sirius, and Google Play Music). They are set up in Music Boss as well. So when any of them are playing, I have two different cards - one for the app itself and one for Music Boss. I can't seem to see how Music Boss gives offers anything beyond the separate apps, other than a common interface. Can anyone with more experience using this app tell me what i'm missing? Thanks!
same here, I found that android wear supports quite a few music apps out-of-the-box.
like vanilla music - they havent released a wear-related update afaik, but when I play music with the app it shows up as a card on my phone with play-pause and I can swipe into a next-previous-vol up-vol down screen
Sony Walkman, Google Music and Spotify works on my watch. No need for Music Boss or anything. Phone is Z2.

I finally found the problem. Sony Xperia has a free application called SmartKey:

With this application it is possible to assign extra functions to the button to answer calls in the headphones.
Anyway, this application was interfering with the SmartWatch option to show the controls in the watch graphic interface. Removing it or disabling it solves the problem.

I flashed my head unit with a recent malaysk rom (update_4_4_4_FUSE_1024X600_RK3188_16_MAL_17_03_2016) and I just discovered jetAudio which suits me as player for different reasons (prev/next SWC don't work in that app and the EQ enhances the sound like the standard EQ doesn't).
But it doesn't behave like the standard "Music" app :
- When starting up the car it doesn't resume playing automatically
- When switching to radio it doesn't automatically pause but instead lowers its volume and you can still hear your music in the background of the radio
How do I get jetAudio to behave like the "Music" would if I used it ?

I think standard music app is controlled by the MCU (If i remember rightly)
So it knows to stop playing when losing focus.
Most other music apps dont work in the same fashion as generally you want to minimize the app and keep playing.
I use JetAudio and have gotten used to the idea of pausing music before exiting and likewise pressing play on start up.
If someone can get around this with Tasker or something i'd love to know too

RocketPlayer seems to do this just fine on my headunit.

I mostly listen to music with Android Auto via Spotify, but lately Amazon Music has been pushing its way in. For example, while I'm playing a song from Spotify, it suddenly stops playing it, and when I look at it, Amazon music is active instead of spotify. How can I prevent this? Thanks,

you could try switchining, use musconv if you do, I used it yesterday to move from spotify to amazon music so I guess it should work the other way around
