I have CM11 installed on my HTC One M7 and I used the installer to put it on. Because I did not do it manually I have no idea how to revert back to sense. I have had a look at some of the guides but they don't mention much to do with my version which is with o2 in the UK. I opened the bootloader and it said that it's S-on and the hboot is 1.56.0000. It also says TAMPERED and UNLOCKED. I need to move it back to stock because some banking apps do not work on a rooted device and I also want to get it sim unlocked.
Can someone point me in the right direction to the appropriate guide or tell me what I need to be searching to figure out what to do.

first of all you will need to post your fastboot getvar all please, if your unsure of how to do this, you can follow this guide, once you get it, be sure to remove your imei and serial number before posting the output.

you are not on O2 rom, you are on WWE (world wide English) 4.19.401.9, just flash this RUU, also check for updates before you flash anything else after running this RUU, as you missing about 5 or 6 important updates, you are on 4xxxxxx software, the rest of us are on 7xxxxxxx

You can root it (unlock boot loader and install a custom recovery and super user), but you can not S-off it. There was this one thread that had the name of this site that would be able to S-off the phone, but you would have to pay and actually send the phone in.

So I just flashed the new viper Rom and after it was finished it went to reboot and booted straight into boot loader and any option I click on it takes me right back to the boot loader.I have searched the forum and tried what I seen but still no luck I have fastboot erase cache and all still with no luck. Without more info, tough to say.
Likely you accidentally flashed the international setup as opposed to Sprint. If so, you need to RUU back to pure stock and start over.

yes you can use M7_UL firmware, they are the same device, its just the UL comes with LTE and the U doesn't, just means the LTE parts of the firmware wont be installed, it doesn't mean you will change your device into an LTE device, you can use any files for the UL on the U, RUU's, firmeware, custom rom's etc.
Also when flashing firmware as you are s-off you don't need to worry about only going back 1 step, you can flash any you like, just be sure to read the OP special instructions first and also make sure your cid and mid match the firmware, also, if you are flashing a modified firmware, ie no red text, you can never go S-ON, this will lead to an instant brick.

Normaly I have no big problems with s-off and my phone is originaly s-off by Revone.
Yesterday I made a terible mistake.
I followed a guide someware (forgot witchone in all the dozens) to prepair my phone for bringing it back to stock.
In this way I needed to s-on so i did :s (I DONT RECOMMENT THIS TO ANYONE)
I have tried so far:
1 Reveone
2. rumrunner_HTC_0.5.0
3. Sunshine (s-on state with Locked bootloader and security warning) no booting roms anymore
So now I uses htcdev (i don't like this) so I'm rather irritated in this.

HTC only produces a RUU for the first factory image so security checks are *&^%*&^$&^%$ (worthless)

Your S-ON so you need to flash an 7.18.161.x ruu. The problem is your version-main is 7.18.161.30. In the ruu colletion there is only a 7.18.161.21.

You will need to change the version-main to flash a lower version ruu. Scroll to the very bottom of the ruu collection link above and read the section about "How to downgrade with S-ON"

I fixed it in the end. I got annoyed trying to use a ruu so I used a Google play edition ROM. I prefer the GPE room.
