According to the one who posted the RUU, my CID, phone model, version match, however, I saw some posts that I need to S-OFF in order to downgrade using a RUU so I kind of need help, or a some sort of guide.
Also, is it 100% sure that the OTA will work fine with my phone? Do I need anything else to be matching to downgrade using the RUU?
First thing you need is s-off. Then you need full stock ROM with preload folder (there are some apps there which get deleted when you unlock your bootloader) and stock recovery. As long as you are s-on, you can't downgrade your firmware, but you can flash KitKat ROM on Lollipop firmware

the file linked isn't a RUU but an OTA update which is useless for downgrading. You will need the 6.13.402.2 Combined RUU which is only available on ir-file.com = paid account to download (I can help you with that since I currently have an account but you'll have to wait since the download speed from this site is capped to 100kb/sec)

you'll need to use Sunshine S-OFF which also cost money
Like mentioned above, custom kitkat roms might be an easier and cheaper option since you doesn't need to downgrade the firmware to run a Kitkat rom. But finding a Kitkat rom for a M7CDUG might not be an easy task...

I found this RUU from @Behold_this, it is the 5.14.531.1. There is a Guru Bootloader Reset Tool to make it easier to lock your bootloader.
Well, the CID and MID have been modded, but other than that it's stock aside from the developer rom.
Also, don't forget you will need to change your MID & CID. Here is a tool for changing the MID without ENG HBOOT | Aroma GUI. The MID and CID you might want to change before running the RUU.
Also if TMOBILE cares for s-on then you need to go back all the way to 1.44 hboot with 4.1.2
That's what I did. I changed the MID/CID, removed the "tampered" flag, flashed hboot 1.44, locked the bootloader, flashed the RUU, then locked the bootloader, and set s-on. It's all back to stock now, unrooted. Looks like I never touched a thing. Also, it's going back to HTC I did the advanced replacement, hence the reason I needed to make sure it was completely back to stock. I'm sure if HTC wanted to they could figure out that it had been messed with, but I seriously doubt they would bother since it's for the purple haze in the camera.

I am currently running ARHD 71.1 with EX 14.12 kernel and all is running flawlessly and am enjoying all the different features. I am S-OFF, and all is sweet.
However - I am contemplating the option of flashing a new firmware due to it supposedly giving "optimal performance". Now, I haven't flashed any firmwares to my device to this date. I was under the impression that the ROM version under the "About" section under Settings was in fact the firmware version - an assumption I now realise is mostly incorrect.
Therefore - how would I go about flashing the latest firmware - as in, would I flash the newest (6.xx.xx) firmware now, and wait for the new ARHD ROM to come out, and then flash that ROM on top of it? Kernel first? What's the optimal order of flashing when dealing with firmwares?

What do I learn from this, aside from the fact that my firmware is the 4.2.2 base firmware, and that I'm leaps an bounds behind the most recent firmware? Everything you need to return to full stock is here, because you have the M7_U, makes it a bit harder: http://forum.xda-developers.com/htc-one/development/backup-100-stock-6-09-401-111-twrp-t2992871
Restore the TWRP backup from the link then flash the stock recovery also from the link, update should work then.
after updating, create a backup and copy to your computer before rooting or anything in case you need it again.

you shouldn't need to flash the firmware, and as your version-main is missing I cant be sure its the correct firmware for your phone, so I wouldn't risk it, your firmware might be newer or even 2 or 3 steps older in which case it wouldn't work, the backup and recovery file should be enough to get the update.

I want to update from ViperOne v6 to v8, but as I understand it I need to update the firmware. I'm S-On so I can't just flash the firmware. I think I have two options:
1 - Flash a stock ROM and update via OTA updates.
2 - Flash a 'close to stock' ROM and use Sunshine to get S-Off. Then flash updated firmware
Which is the simplest? I've done some research but I'm not really sure which files I need to use to do either method.
Any help greatly appreciated!

yes it is right, but with s-off you can flash any firmware you like, just make sure its a full firmware package, not one thats been pulled from an OTA.
on a different note, if you want to return to stock and just do all the OTA's all the files you need are here: https://www.androidfilehost.com/?w=search&s=4.20.206.16
restore the nandroid first using twrp recovery, then easiest way after that is to flash stock recovery, lock the bootloader and pull the firmware from the OTA then flash that firmware, you'll be full stock then and able to update.

Having rooted and played around with other devices before, I immediately looked up all the guides and necessities to get this thing up and running. It was running Lollipop when i got it, so that means its running HBOOT 1.61.0000. After digging around some more, I learned that It isnt possible to s-off with this version of bootloader. And to go around this, I have to downgrade with a RUU. Now here's my real problem, I cant find a RUU compatible with my CID. I'll paste what i got from the fastboot getvar all command below and any help would be great.

You can stop looking for RUUs because you need to be s-off in order to downgrade h-boot. You can s-off your phone with sunshine, but that costs 25$

What about the Guru Reset Roms/Tools? I tried installing a 4.3 Asia WWE guru rom and HBOOT was still the same. If I go down to 4.1.? will it downgrade? I would just like to know if there's anything else before I lay down USD$25 on sunshine.

As I said before - you can't downgrade h-boot with s-on. Sunshine is the only way to s-off your phone. OK, there is a gold card option, but that is even more expensive than sunshine, and it's complicated to do
