Can I install an Android One rom on the Wileyfox Swift and get OTA's and the like? Or should I better buy the General Mobile 4G for that?

You can, I'm using an Android One G1 which is Android One (Second-Generation). I have tried using Wileyfox Swift Rom.
BUT as long as when you are going to flash a custom rom from Android One (Second-Generation) (Seed), you must have a custom recovery which is compatible with the rom.
*NOTE: Always flash a rom with the "SAME" recovery version
Because Android One (Seed) must have a recovery for seed version and rom for seed version ( SEED ROM FOR SEED RECOVERY)
Recovery ----> dl.twrp.me/seed
Rom (LineageOS) ----> download.lineageos.org/seed
And Wileyfox Swift must have a recovery for crackling version and rom for crackling version (CRACKLING ROM FOR CRACKLING RECOVERY)
Recovery ----> dl.twrp.me/crackling
Rom (LineageOS) ----> download.lineageos.org/crackling

There is no LG official recovery
If you need to go back to your stock firmware....then search for the stock kdz file or smart flash to the stock...then un root it...Will be perfect stock
But I am sure you will be running back to custom ROM immediately as the stock is a joke...lol

Have you tried pengus77's unofficial CM10 with Kowalski Kernel? It offers better battery life in my experience than any ROM, Stock or Custom, though your mileage may vary.

Kernel for Lollipop?

What kernel are compatible with Lollipop rom, sense based? One that is support motion gestures and s2w?

Google Play Edition Android 5.0.1 - ElementalX-m7-19.3-GPE
Since you said you are on a Sense based ROM, running android 5.0.2, then you would want version 19.5, if you were running a Google Play Edition ROM like I am, then you would want version 19.3. You also need to flash this from a custom recovery.. Hopefully you are running TWRP 2.6.5.0 (the latest version).

Marshmallow for sprint m7 ,

Hello. , Roms have been coming out lately and I understand that most are in beta , but this particular device was said to have marshmallow development back when I asked in October , but the gsm models have had marshmallow cm13 for a while now , and has recently got a second build , that had been more than enough time to patch the Roms for Verizon and sprint m7 users , is there anyone out there that marshmallow for this particular sprint model m7wls , m7spr please and thanks

marshmallow on sprint HTC one M7??
Hey I am running marshmallow now on my M7. I got the rom from http://www.vanir.co/word/
What you have to do is download the latest lolipop rom first - then when that rom is installed there is a ota for the marshmallow rom. Its cm based and works pretty good. I have rooted it and am running xposed. The root for this rom is cool because you just go to developer options and turn on root access. No need to install SU as a separate app. Also, the ota is great. This may be the best rom I have installed yet to date.

Is it still required to first install Lilipop ROM instead of just installing the Marshmallow ROM right off the bat? I'd prefer to go straight to Marshmallow as is done in the video: https://www.youtube.com/watch?v=6gyLF02rgFY
Their latest nightly will stand alone. Just install has you would any new rom. Be sure to use their gapps.

1) Can I install the viperone custom rom on an HTC One Mini 2?
If yes, which version would you recommend?
If no, which custom rom would you recommend which largely retains the stock look?
I'm currently running Android 4.4.2, Sense 6-0
Softare: 2.19.401.2
The phone is rooted and TWRP is installed.

There is no Viperone Rom for the One Mini 2. There is a stock rom in the thread but it is of an older software version.
Since it isn't a popular phone, there is hardly any development for it. So you are kinda out of luck when comes to using custom roms
