It seems 5.0 will require not only the 5.0 kernel but the new bootloader from the new firmware in order to successfully boot, both which are not an option for our locked bootloader devices.

So the only way to get 5.0 as of now is to unroot to get the ota??

No, there is currently no way to get 5.0 unless you have the G900F or Sprint variant.

Oh no yeah i know that but what im saying is when its available for us the only way to get it would be to unroot to get the ota when att pushes it out right???

Correct, and even then it's been my experience that the ota update may still fail and you may need to first Odin back to stock NCE in order to successfully take the ota update.
Has anyone figured out how to root stock Lolipop rom yet?

It's meant for international G900F
G900A hasn't had the lollipop update yet.
No you cannot use that method to root AT&T G900A
This is the only way to attain root
