Q: How does one make quick launch (launching camera via lockscreen widget) behave just like launching the camera from the app drawer? If you've noticed, quick launch forgets everything, defaults to Superior Auto everytime.
Attached: Quick launch settings in the Camera app - the only quick launch settings I could find.
That's your only option when using Quick Launch and Capture.
Don't know if you can change it with a custom ROM or mod.

Go to the settings tab (module specific settings) or the Xposed Installer's Settings pane (global settings) and check the "Versions to be shown" preference.

There doesn't appear to be an apps under settings on the watch side and on the phone side I am not seeing those apps at all
Me neither! Might be specific apps for LG phones?
