I think you should consider this first : If you still haven't unlocked your bootloader and you like Sony's UI and apps and features, then don't unlock your bootloader and keep your Camera quality as is, it's better on locked bootloader, if you unlock your bootloader you will lose the camera quality and Sony's exclusive features (these can be recovered but not the camera quality).
Now to answer your question : First If you're frustrated by Sony's stock firmware and it became laggy for you and you don't like Sony's bloatware then Nougat is good, faster and has much more features than Lollipop, but honestly you can wait for Oreo carbon rom when it's officially out (might take sometime), the performance is faster and is much more smoother on Oreo than Nougat.
Keep in mind that you should know how to flash custom roms and not brick your device, and how to fix your bricked device before you do anything, and how to return to stock firmware.
As for battery life I think it's much better on Sony's stock firmware than any other rom (thanks to Ultra/Stamina mode and Sony's optimizations for lollipop on their firmware), and you might face some heating issues (not often) with some nougat roms, and they can be buggy too.
Keep in mind that battery life depends more on how use your phone but in general stock roms are optimized (especially sony's) to have better battery life than most custom roms.

You can backup the TA partition before unlocking your bootloader. If you didn't or you've lost it then you can use this mod on the stock Lollipop ROM instead.
If you've got a backup of your TA partition then you can also use this mod with an unlocked bootloader.
If you use either of the mods enter *#*#7378423#*#* into the dialer. Select service tests and then select security. If every line contains "[Key OK][Active]" then you've got working DRM functions again.

I'm new concerning Custom Rom so i want just asking some questions about Custom Rom/Stock Rom because for a while I want change my stock rom into a Custom ROM ( with unlock/lock bootloader doesn't matter ).
Are you satisfied about your actually Custom Rom ?
And what is the advantages/disadvantages about Custom Rom ?

In simple terms stock based roms will use the Sony skin and many of Sony's apps - typically the developer will have tweaked the build to improve performance or used the most recent version of Sony apps from higher end devices (the Z1 for example). They may also add some extra features - (using the volume buttons to skip music tracks/advanced reboot menu).
Custom Roms won't have any of the Sony features and generally will be closer to unskinned AOSP (Android Open Source Project) in appearance. They will mostly have some unquie features and be more options for customisation than a stock based ROM. Developers can also release higher versions of Android than Sony, allowing the user to experience Kit Kat long before Sony release a build. They tend to perform better than stock builds because they are less bloated. Sony has significant facebook integration within it's builds for example, similarly whilst it's possible to ignore it, there is a lot of secondary marketing within a Sony build trying to get you to use their music/video/games services. Most of these apps are heavy, slowing down the device. The SP copes fine, but their are definitely smoother custom roms out there.

Sadly....a stock Google rom is not possible....yet.
We are stuck with touchwiz roms due to kernel and bootloader restriction.
If and when our Amazing development community is able to unlock our bootloaders...we would then be able to use pure android firmware....but until then....a modified stock TW rom is our only choice...g
Idr which phone it was, S4 maybe. There was a modded cm11 that had a stock kernel somehow and was flashable with locked bootloader. Which that could be the case here cause I like running CM from time to time!

In my opinion its better to unlock the bootloader and install a custom rom
As long as you don't want to unlock your bootloader you could safely upgrade to .270 and root your phone using kingoroot( then remove it using some scripts and install supersu)
Or just stay at .270...
You can also downgrade it back to KK using Flashtool if you don't like lollipop..
Lollipop has some issues (depends sometimes .... ) but for me its better than KK..
Also we are currently waiting the new official 5.1 rom which will fix most of the issues (I hope so)

IMO It is better to use KitKat with this phone. You can tweak the hell out of it and play with multiple roms. The stock rom for Lollipop on this phone is a joke. You could quite easily use the same software running on z3 roms on this phone.
But for now I have one recommendation. This is my fave rom for Kitkat.

No, because you need Marshmallow sources from Sony, which they'll never release.
Z1 is done and obsolete. If you really want the latest Android version, download the unofficial CM/AOSP Marshmallow ROMs; otherwise, buy a new phone. Although CM/AOSP MM build has been released a while ago, they're still full of issues (camera is bad, low battery life, etc.). They're still under active development, so things may change in the future. I recommend staying with Lollipop because it's stable and has excellent battery life.

and I love sony features.(DSEE HX, Sony camera...)
So, I wish what I said, but it can't....sadly :crying:
maybe, buy used Z2 or X series is best choice in current situation.

People had success with porting Sense 6 to hammerhead, and it's surprisingly usable with some issues considering it's a non-source port for an entirely different device.
Porting a proprietary ROM is a pain as it mostly involves trial-and-error to find out what's preventing the ROM from booting up but we will see if a similar project appear for the Z1

Are there any advantages of using locked bootloader device? Expect DRM functions, which I can restore on UB, is it better to have LB if I only want to use stock based roms?
Well if you want fully stable,stock based ROMs are the only choice,personally I prefer locked bootloader because I don't have to deal with DRM bullsh*t
