Back on 8. 1 when you hit the 2x zoom button it would do a digital zoom. The only way to use telephoto lens was is manual mode
This is no longe the case in pie.
The main camera using digital zoom is vastly superior in quality to the zoom lens in most scenarios.
Is there any way to force it to allow digital zoom?
it will switch automatically to the main camera when its dark. try to cover the telephoto camera.
When using the AI camera option it makes everything so coloured it does not look natural at all, is this a certain settings in manual because I don't know how to take good pics.

I remember having 5 MP nokia phones giving best photo results due to very good focus.
SO how can we always get the best focus when taking photos
Open camera app
goto setting
Focus & shoot => on
Now whenever taking photos tap screen let it focus until camera icon appear. Now press camera icon again.
best focused photo served.

Google Camera and Open Camera cannot even access the Telephoto lens. The stock Samsung app only allows you to use the Telephoto lens only during daytime, at night it defalults to digital zooming and also there is no lens switching in the Pro mode.
The only way of using the Telephoto lens is to go to Live Focus and set blur to 0. And you can't even zoom further in that mode.
HTC, Sony, LG, etc. phones allow manual mode on all of the rear cameras.
Is there any flashable modded Samsung camera that allows full manual mode on both rear cameras? Or an app that has deeper control over the cameras?
Well... It would be nice to have manual on the ultrawide front camera too like a lot of phones have. And access to the infrared one too, like on all the Xiaomi devices with that one app that doesn't work on Samsung devices because it's locked out from the user. But still... Manual mode for the Telephoto lens would be good enough for now.
In the camera app under settings there is an option to enable "Lens Package". Do you know what this is or does?
Sometimes while in Photo mode or Portrait mode, no matter what lens I choose (1x, 2x, 5x) it uses the 1x lens and I guess digitally zooms. I know this because when I tap on the info button inside Albums or directly from the camera app, the data shows 23mm aperture 1.57, 46mm aperture 1.57, 115mm aperture 1.57 for 1x, 2x, 5x. But if I switch to Pro and shoot the same 1x, 2x, 5x I get 23mm/f1.57, 50mm/f2.02 I think and 125mm/f3.4. But sometimes when using Photo/Portrait and selecting 1x, 2x, 5x it uses the proper lens. I'm just trying to understand why? Maybe with AI enabled for scene optimization it chooses the faster aperture lens and digitally zooms to allow for more light??

Lens package is a shortcut to launch your camera with the selected filter/settings (e.g. Astro mode) straight from your app drawer/homescreen. You can turn it off, it will not remove those features from the camera app.
In pro mode, I believe the actual physical lens used is determined by the 4 icons used (telephoto, standard, medium telephoto, telephoto). From there you'll dial in your tweaks like aperture, shutter speed etc. Pinch zooming them in and out will digitally zoom your shot while using the selected lens. I verified this by physically covering each lens with my finger to see what lens it was using but I didn't take a shot to check the album details. Let me know if this helps
