No, you will not Unlock your SIM and you will not damage anything. You will just switch from Branded to Unbranded, so bloatware from your Carrier will gone.
For simlock unlocking go and ask your carrier. They will probably do it for some small fee.
I've recently bought a used xperia z but I'm not sure if the bootloader is locked or unlocked.
So my questions are:
1)How do I check this?
2)If the bootloader is locked does this guarantee me that the (stock) rom has not been "modified" previously?
My concerns at security related.

then service info>configuration>rooting status
we will have locked bootloader when we bought it
and no bootloader can be unlocked & relocked so don't know,or you can check if the BRAVIA Engine works on Sony Album app or not

It's possible to unlock and relock the bootloader without leaving any trace that it was done. You can check if it's currently unlocked by looking in the service menu. Enter *#*#7378423#*#* in the dialler, then look in Service info - Configuration.
If you're worried just repair the phone with SUS or the PC Companion. This will completely wipe the phone and reinstall the software from scratch, therefore ensuring that nothing is tampered with.

Hello, I have the sony xperia z3 + I unlocked the bootloader but the problem is that after I enabled sony Protection System, and do not want my bootloader unlocked whatever I do the phone works well, but for the bootloader I can not do anything ... I already tried tool studio flash and android nothing there ... I already thought envoy to sav but he will see that before I unlocked the bootloader ..I do not know what to do for the unlocked if you like it
