I have a Samsung Note 9 Exynos SM-N960F/DS, Onw UI 2.5 with the latest march 2021 security patch. I have been looking for a way to Root My phone. Since im new to all this, My question is do i use the updated and latest version of the Tools used in the tutorials mentioned or the same will do. or if someone can point me to the latest method for rooting my phone.

Be very careful mate. I ended up in a right mess. I can't flash stock now. Lost my stock recovery...everything. I'm stuck with twrp recovery & custom rom atm. Wish I hadn't bothered.
its been a few years since i modded a phone. i recently got my hands on a used samsung galaxy note 8 {factory unlocked/no carrier} with a snapdragon processor.

The snapdragon version is called the "greatqlte". You can root it via twrp, but I'm not sure about custom rom support, and definitely not lineage19.1.
The snapdragon version has basically no support on xda. Someone posted a question similar to yours a while back.

I don't think there are any roms.. I think I saw an oreo one, but you're probably better off sticking to oneui on android 9, which is stable (unlike the oreo build).
You can still root and debloat/customise your phone via magisk modules etc.
i just want to ask how to root my galaxy s21 ultra.im afraid to follow some tutorials in youtube because its all lowest android version.

Read this magisk documentation - Samsung section. Just for your information, S22 doesn't require to select "Recovery Mode" option.
