i was using juwe n now i'm using simply honey.. both good roms.. in the end it depends on u.. try both

Yes it will. Simply follow the link provided by sathkartha. There in the first post you can find links to guides that include everything.
CM7 and Miui are the fastest but battery might be a little bit worse (depends on the person, on my phone battery is basically the same as stock aprox 24-30 hrs). Miui is definitely the nicest looking out of all them though while CM7 is the fastest

What you're asking for here is as good as "What is the best religion?". Everyone, as you can see has given you their personal opinion, but few solid grounds. In the end, you'll just have to start trying out different ROMs (if you really want to, that is) and decide for yourself, which ROM suits you the best in the end.
Among the Samsung based custom ROMs, they're all pretty much alike, with a few theme differences, but we have the UOT kitchen for that, so no biggie. What's important is you use a base you find stable, and a radio package (Modem) that gives you the best battery life (If you're in India, that would obviously be DDJV4 from the DDJV6 official Indian GB for SGS firmware). On the other hand, AOSP ROMs like CM7 and MIUI are far more robust and powerful, but at the cost of some battery life, and they're still "Work in Progress" with few bugs (which are getting ironed out... and FAST!). You'll notice the difference in a heartbeat. MIUI is simple the best THEMEable ROM available.
All in all, the decision rests with you and you alone. Choose wisely.

I wanted the MIUI rom , but it says thaT the PHONE should be 2.2 froyo base but mine is 2.3.3 gingerbread ! what should i do now ?

Go for custom roms, far more available memory plus there are lot of tweaks enabled developers to make sure your phone is smooth.. trust me try simply honey 3.6.1, u'll love it.!
Please feel free to browse through the dev and q&a sections. You will find that there are plenty of different roms and kernels available, along with other spicy details/guides. Many of them will tremendously increase the battery span, but will present you with different options with regards to the user interface.
Depending on the android version you're running there are different paths to choose in terms of minimum difficulty.
But, for someone totally new to roms&kernels, who is running 2.3.x already, I'd just reccommend starting with Darky's rom, as it has a great userbase with amazingly detailed guides, you really can't go wrong with their tuts should you feel insecure about flashing etc.
And then when you discover that you're still not happy with the speed, feel free to dive into the dev forum as I said

And another thing you'll find is that there is no such thing as a BEST rom.
After all, all of this is coming from people limited in their numbers, time and funding....
I have tried "Simple Honey 3.6" but the available memory was from 120 MB to 140 MB (I think it is bad because with the ufficial firmware I9000XXJVO the available memory was 160 MB!!) and the battery doesn't last long...

It's a matter of personal preferences really ...
Only way to get a proper answer is to test/use each ROM for a few days up to a week at least.
It also depends a lot on what YOU are looking for and use the most in a smartphone ....
From MY subjective point of view ,Galnet MIUI is the "best" ROM.
If you can do with not so great battery life and few other bits this ROM is great , but others will contradict me I'm sure and will have good arguments as well ...

If we are just talking about the number of users, Doc's Rom kitchen wins hands down.
But in terms of added function (which is sort of what custom roms are about), there are many other better roms.
On the cutting edge of development, you have CM7 and MIUI. Cyanogen Mod is closer to the vanilla Android experience, while MIUI produce a more iOS like interface. Both have a myriad of new functions that you won't find in any other roms. However, both suffer from battery drain problem, camera quality drop, no 720p recording, etc. It's the price you pay for being at the forefront of development.
If you prefer to play it safe, there are a whole load of custom roms that are based on stock roms. Juwe smart edition, simply honey, Darkyy, etc. It's difficult to judge which is better, so I suggest that you choose on the basis of theme.
I have experienced many roms, including ROM Kitchen, Stock, Darky's, Simple Honey, etc... and my opinion is that, for me, the best one now is Galnet's MIUI. But that depends on what do you want from it: Speed? Stability? Appearance? As for the battery related problems, I have yet to find one that gives me problems. obzcen is right:

i am using an Dutch ROM with the Talon kernel , that us supporting custom boot animations , i made an few 4 the Talon kernel which i am gonna post them on XDA soon !
Darky has been out for a while and are now on version 10.2, so it feels stable. f1 if you want speed.
It's hard to say which is best rom for each invidual . The best way is that you try some of the those most popular roms. In my opinion the best rom at the moment is GalnetMIUI .

Tried all other roms... but still goes back to F1 Galaxy S2 V6 SP1 + Galaxian SP2
It's hard to say which ROM is the best because ideas is different and best way to find best ROM is try some of popular roms.
But I like amestris custom Roms and JVR stock ROM+semaphore kernel

I've just bought SGS and I need some advice before i choose ROM.
I was reading a lot about different ROMs here on forums, youtube comments, etc.
My favorite ROMs are Darky'S 10.2 and Jetpack mod 8.2 or maybe some ICS rom.
What I want from ROM: speed, smoothness, as much free ram as possible, all things working.
Is here anybody who tried these ROMs and can tell me which one is better? Or maybe some kind of pros/cons for these roms? I don't time to try them all and decide myself which one is best.
Please give me some tips.

-which rom is more stable as a daily driver?
- i use phone mainly for whatsapp, SMS, Facebook,.forum runner... but . no games.
- preference to have better battery life but not a definite must as I am office bounded.
- base on the recommended rom, what are the things I need to be aware? E.g. SMS not working well.... xxx soon will hang and stuff....
Any recommendations or input appreciated.

JB is not that stable, Stay with TW roms.
And while ur at it, start reading the JB threads especially the changelogs as it will answer ur question on what works or not.

Just check the sticky thread in development section for various custom roms & their features. If it suits your taste you can try to install it. For me Paranoid Android 2.1 by Imilka is good JB ROM. Just keep a nandroid backup of your current ROM. Try flashing various roms following the instructions. If you dont like just restore the backup & you are back.
As has been said once & again be on a safe kernel. Hydracore is the preferred on as it is THE UNIVERSAL KERNEL...

@OP, I don't think you should ask suggestion on which rom to choose, people have different taste and everyone will suggest different rom. Better for you is to check the respective rom threads and then choose best suited rom for you after going through rom OP and latest user comments if possible.

Hey, I was a fellow Criskelo (and Chrack) user until the final release. Excellent ROM, similar to Foxhound on the GS2. In my personal opinion (hey, its only an opinion) the current JB ROMs are ok but not "different enough" to warrant using as a daily driver. I have had issues with A2DP and SMS not being received. S Apps wasnt a problem as I prefer GNote and Papyrus. I would recommend you try Chrack V15 (on Hydra 4.3), in my opinion its better than Criskelo and the battery performance is superb. You wont be disappointed.
