Are there other ROMs with these very good features?
Or anyone know how to get this manually installed in a custom rom?

For question 1, Derpfest has this feature and many other customization options.
The c&p function in the recents is a feature of pixel launcher, you can add this in every Android 11 ROM afaik.

This is a magisk module that install pixel launcher for Nokia 5.1 plus with Android P. If you want to use pixel launcher instead of quickstep, you can try this module. Of course magisk needed. Go to hikaricalyx.com for unlock bootloader and root.

Can anyone advise on the best launcher choice for dual-screen phones?
i had to search a while before i found a launcher that i felt worked well enough to use, because the stock one is pretty bad. Launcher 10 is kind of a metro UI launcher which might not be to some people's fancy but it scales instantly when switching modes and rotating and it has a lot of customization i haven't messed with. definitely more usable than the stock launcher

Just wanted to add that for the ZTE AM Z999 I am using the Microsoft Launcher Beta version which supports proper home screen rotation for dual screen in conjunction with Rotation Control app

One feature from iPhones, and more recently BBK Group devices (OnePlus and Oppo) that I really like is Smart 5G switching as it automatically turns off 5G when it's not needed to save battery life.
Another feature from Google's Pixel line is the ability to select text from the Recents screen, useful when text isn't selectable usually.
Does ZenUI have either of these? Thanks!

Regarding the text selection from recents screen, that is unfortunately not yet possible. Coming from a pixel 3 I do miss this.

Is tehre a way to show the arrow icon, at the bottom left of the keybord, to hide the keyboard (see screenshot, of course not mine but from a friend).

On miui 14 you need to enable the full screen indicator in system navigation and it will be displayed by default. On miui 13 it does not work

Maybe this video will help you understand. But on MIUI 13 you cannot activate it, it only works on miui 14
