The items you're indicating above are mostly firmware versions - UCKK2 is what KK2 is short for, which is a numbering code adopted by Samsung (I believe) to indicate what version of Android is in the firmware, what month/year it was released, and what revision number the firmware is.

Jvt is an I9000 build that has been ported to the cappy
Kk2 is the newest captivate native build
Kj3 is an older native captivate build
OR4 IS Obsession revamped 4 (a jvt based rom)
rc5 is the edition of the rom its basically the 5th or so edition
Kk1 is the native captivate build between kk2 and kj3
Jvq is an i9000 build that came out before jvt

Here is the Samsung code if you are intrested (basically says wich wireless provider, year, month and order it was released.
Rc5 means Release Candidate #5.

OK, I'm running Cognition 3.04 with the Speedmod Kernal.
People are telling me they can't understand me on the phone. For what I've learned through flashing over the past few months and reading around, I believe I need a different radio. Am I wrong? If not, can someone point me in the right direction?
I've seena few references to radios on here, but never with a link or a better explanation as to what details I need to look out for.

OK, so should I be looking for modems then? 'Cause I went through that thread and flashed both UCJJ4 and UCJI6 (one at a time of course) but neither fixed the issue.
the problem is not your rom, but your modem, i believe. try jl2, jk4 if you are on i9000 rom.

Hmm...Cognition is made specifically for Captivate...was it wrong to assume is was a i867 ROM?
Is there an easy way to tell on the phone which model my ROM is built for? The "Baseband Version" reads I897UCJI6. Is that a hint?

Your problem is you're using an i9000 kernel with a captivate modem. Cog is considered a pure captivate rom, so if you installed speedmod (which is based on an i9000 kernel) you need an i9000 modem. I think JK4 seems to be the most popular

Well, I flashed JK4 and it works. So I guess the speedmod for Captivate isn't actually for Captivate.

Things that are for the captivate are for the captivate and the version of the speedmod kernel you flashed from the captivate forum is for the captivate, but...
What everyone is talking about above is what those things were ORIGINALLY designed and built for. In short most things out there were originally built for the i9000 (since AT&T is dragging their feet on releases) and then ported over to the captivate, meaning the code, config, etc. is changed a bit to work with the captivate. So what everyone is saying above is that speedmod started as an i9000 kernel and works best with an i9000 based modem.

there are many 2.3.3 custom ROMs available for the SGS, although the SGS does NOT come stock with 2.3.3..
2.3.3 is also not available 'officially' through KIES, but it is available on a website www.samfirmware.com
which is 'leaked' official version.
and finally, EVERY custom Kernel supports lagfix, and majority of them also support Overclocking and Undervolting

i know it doesnt come with stock 2.3.3
i ment,a rom/theme closest to stock 2.3.3.
thank you on the kernel heads up though.
i think id let her wait until official update comes through(any time soon here)in KIES
But for now there is no OC/UV Kernel for 2.3.3.

anyway you can get a good kernel / lagfix with 2.2.1 and just apply a gingerbread theme, until the update arrives,
if your GF is anything like mine she wont even notice
awww bummer.
the problem with my gf is,she is pretty interested in what my nexus S
and my spica(that she's using for now.until she has the galaxy s) can do.
adn she asks pretty often,can i do that,how do i do this ect.
and mostly my answer is: you need root or thats only with custom kernel/rom.

If you don't know if you have CWM 3, check the color of the text. If it is orange, then you do have CWM 3. You can use the link in the above post or my sig.
If your text is not orange, then you have CWM 2 and can flash the normal Froyo modems.
I have flashed several Froyo and Gingerbread modems using Continuum 5 RC3 and have had the best luck with Gingerbread ROMs. However, that is based on my phone and yours might be different.

I am new to Galaxy S but have had experience with roms, kernels and radios from a G1.
I started with Samsung 2.2 firmware and rooted it using Cyanogenmod wiki page and flashed the latest MIUI. I know kernels change speed and include Voodoo colours and sound for Galaxy S. I also now radios can change signal and gps accuracy.
1)Are modems the same as radios and if so where do I find a list of them?
2)What is the best bootloader and why does the Gingerbread one not have sd cards work? Also what else doesn't work?
3)How can I check which radio I have and if I flash any bootloaders how do I check that?
Radio, Modem and Baseband are all the same thing. You can check which one you have by going to Settings >About Phone and checking the Baseband Version.
A new modem is easy to flash as a zip file from Recovery and you can find lots of them by searching in the Dev forum, however make sure you flash a modem that is for CM7 since you have Miui installed. For guidence you can search for Modem in the Miui or CM7 thread in the Dev forum.
As for bootloader, there is no way to check which you have, but as you installed Miui directly over 2.2 you should have the froyo bootloaders. CM7 and Miui were designed for froyo bootloaders. Some people say that GB bootloaders have better battery life but if you have GB bootloaders with CM7 you can't access you external SD card and other things may not work properly. I would suggest staying with froyo loaders for now and seeing how it goes.

Try jvp or jpy, I'm on orange uk, insanity cm and they both work fine for me don't forget you need cm7 modem, there are 2 threads in dev for this

About bootloaders
I have a SGS GT-I9000, and following
directions from ROM kitchen, I installed a Froyo 2.2.1 version.
It's I9000XXJPY with 2.6.32.9 [email protected] #22 kernel
and it says Rom kitchen v11.1-ZSJPK.
I wanted to install a Gingerbread version from ROM kitchen as well, but it says I have to make sure I have at least JVH bootloaders. Ummm, do I ? And what to do so i could install a gingerbread to my SGS ?
I installed a 2.2.1 froyo also from ROM kitchen I9000XXJVO with 2.6.32.9 [email protected] #22, build number XWJSD, hoping i'll install newer bootloaders with it.
But, i had problems with messaging so i'm gonna have to revert to previous one.
Do i have proper bootloaders or not and what could happen if i tried to install Gingerbread and don't have proper bootloaders.

newest is jvr and it appears to be closest to a final release as far as I am concerned based on use of the earlier previous versions (jvh, jvo, jvp).
You will find less rom choice for jvr as it is just new: even fewer good kernel options -- over on the development section you will see new posts as developers issue new releases to match the new stock version available.
Many choices for jvq but the basic stock firmware is not as solid as jvr.
Check posters signatures and you can see what people are actually using: no one can say what will be the best for you, only what preference they have and why.
