Install More Locale 2 from the Play Store to translate most of the phone (everything except the system menu I believe)
Alternatively root it, install safestrap, and run Mentor's ROM for a stock based ROM with French language. Alternatively CyanogenMod or AOKP if you prefer a totally custom ROM.

I got this unit, relatively cheaply, in china. I realised it was rooted on two items: superuser was installed, and when keeping the start button depressed it came up with some chinese menu for shutdown, even though the os language was set to english.
I could set up my google account without problems, but i couldnt access the market. It was as if they used a short cut with an android market icon. Having said that, when i went to the market website online, i couldnt sign in on that. My non rooted htc phone has no problems accessing the market.
Interestingly, when i connected to wifi it popped up a softwarenudate notification, which it couldnt download due to absence of a SIM card (i didnt put my sim card in it yet)
Any thoughts/comments/suggestions?

Right, i managed to get the market working by performing a factory reset.
Baseband version=N7000XXKJ6
Kernel=2.6.35.7-N7000ZSKK1-CL706440
Build=GINGERBREAD.ZSKK1
Right now i found that the problems i ave with this build, is that any firmware updates cannot be installed (i get a registration error message, and yes, i did register the unit with samsung).
It also contains several chinese apps that i cannot uninstall and are a nuisance.
One is called 360-something (its in chinese which i dont read), another one is called Gexin. Both apps actually report new messages.
There is also a QQ security app running (i know QQ is very popular in asia).
Ideally id like to have a UK or US original firmware, so i can update to ICS when it comes out in the next month or so. But a modified US orUK rom would probably do as well if necessary.

I have a Samsung Galaxy S5 I got at AT&T and paid it off... so it's completely mine. Then I had them unlock the phone for me so now I'm in Ukraine using this phone, but it's in English and there is no way I could have the phone be completely in Russian. I've used a third-party app called "MoreLocale" to change the locale to Russia (had me do some ADM/fastboot codes to allow it) but that didn't completely change it to Russian.
It changed some applications to Russian which have Russian translations to it, but the ROM itself is in English... I'm trying to get it to Russian, but I'm afraid to root it and flash a new ROM on to it as I'm afraid I might somehow re-lock it to AT&T service or something else. Basically, I'm afraid of loosing the use of this phone. A phone like this one here in Ukraine is expensive, and they don't have deals like they do in US where you get to pay off monthly.
So my question is, is it safe for me to root the phone and flash a custom ROM onto it?
Another question, if it is safe for me to flash a custom ROM onto it, does it have to be AT&T compatible, or can it be international version now that the phone is unlocked?

All ATT S5 have bootloader locked. You will not be able to flash custom ROMs. There are few which can be flashed using safestrap.
The SIM unlock on the phone (which you have) is permanent. Whatever you do (factory reset, root etc), it will remain unlocked.

I remember this working on a Galaxy S4 on Touchwiz-based ROMS....I take no responsibility for mess-ups here.
Assuming the device is rooted stock and on 4.4.2...navigate in RootBrowser to: /system/csc
Rename language.xml to something like language_old.xml and then restart the device.
Coming back from a reboot, you should see all international languages for selection in Language and input>Language.
I'd try it myself...but I have a currently unrootable Lollipop ATT GS5.

I Install CM13 ROM (20160906-NIGHTLY-w7) on my phone and it worked fine until i remove the SIMCARD and them the phone not read it anymore. Try updating to the Nightly 908 and the problem continues. Try flashing the bootstack KK but did not work. I returned to the stock rom KK through KDZ and still not reading the sim card in any of the two ports. I need help, urgently, dont know what else to do.

I did some testing with my S20 FE 4G Snapdragon and some disaster. So I downloaded via Frija the latest Italian firmware and flash it via Odin. The Sim is active and yet I always end up with a firmware that looks Russian, when I first restart the phone and the selection of additional Samsung apps to install appears they are all in Russian and then among the bloatware I find a Russian folder with Yandex and other apps that I can't even uninstall. I've tried the same firmware from different sites, even one more less recent, but nothing, I'm always in the same condition. How is this possible? And above all how can I flash an Italian firmware or at least one without Yandex and other Russian apps?

total guess but maybe it's a multi CSC rom you flashed and as far as the rom can tell (based on what it's expecting) your SIM card is being seen as Russian.
take the card out and reboot, see what you get then!

It's as you say, the phone is European (the seller had told me it's Italian, whatever).
The firmware for many countries is always the same and and when I turn it on after flashing the correct CSC is not recognized for my phone.
I tried everything: older firmware, flash with sim, without sim, dozens of factory reset with and without sim. Then also to use via phone a code + imei (as many guides explain) and also to download google phone and try to change csc with that, but nothing to do.
I've read that other people have the same problem, I understand that it's an additional block created by Samsung to prevent the phones from being de-branded or used in a different place than where they were purchased.
The only thing you can do, apparently, is to buy credits for the Samkey software which should fix the problem. For this phone it is needed 10, we're talking about 30 euros. In all sincerity I don't care and I keep it like that, especially since I managed to flash the Indonesian firmware so I finally have native call recordings, then if I ever sell it I'll reconsider...

Sorry, I don't fully understand the issue you have. What's the problem with your IMEI exactly?
The imei of the phone has been changed. when performing a search when I first got it. After flashing stock rom it didn't search.
Then I installed the custom rom. He didn't call again.
