Then I had them unlock the phone for me so now I'm in Ukraine using this phone, but it's in English and there is no way I could have the phone be completely in Russian. I've used a third-party app called "MoreLocale" to change the locale to Russia (had me do some ADM/fastboot codes to allow it) but that didn't completely change it to Russian.
It changed some applications to Russian which have Russian translations to it, but the ROM itself is in English... I'm trying to get it to Russian, but I'm afraid to root it and flash a new ROM on to it as I'm afraid I might somehow re-lock it to AT&T service or something else. Basically, I'm afraid of loosing the use of this phone. A phone like this one here in Ukraine is expensive, and they don't have deals like they do in US where you get to pay off monthly.
So my question is, is it safe for me to root the phone and flash a custom ROM onto it?
Another question, if it is safe for me to flash a custom ROM onto it, does it have to be AT&T compatible, or can it be international version now that the phone is unlocked?

All ATT S5 have bootloader locked. You will not be able to flash custom ROMs. There are few which can be flashed using safestrap.
The SIM unlock on the phone (which you have) is permanent. Whatever you do (factory reset, root etc), it will remain unlocked.

I remember this working on a Galaxy S4 on Touchwiz-based ROMS....I take no responsibility for mess-ups here.
Assuming the device is rooted stock and on 4.4.2...navigate in RootBrowser to: /system/csc
Rename language.xml to something like language_old.xml and then restart the device.
Coming back from a reboot, you should see all international languages for selection in Language and input>Language.
I'd try it myself...but I have a currently unrootable Lollipop ATT GS5.

I write this post as I hope to get some input and some expert suggestions on the course of action I should take with my phone.
For many years I have been supplied with a phone through my company but it seems to be always the crappy old Nokia. Good for making telephone calls but worthless for anything else.
So recently I bought a Galaxy S on a business trip to China. I love the phone, it works and by now I have almost no Chinese letters and applications left anymore. This is really something else; I'll never go back to the company Nokia. Never!
I think most of the applications are working and I have access to the Android Marked. However, Youtube is not installed or working and I think that the GPS is a little off.
Now I read a lot about Froyo and I bet I would want to get that on my phone, I am also pretty sure that I want to get the phone totally de-Chinese and preferably into something Danish or at least English.
What do I do next?
I have been reading so much on this site that I am getting dizzy. Flashing, rooting, updating, kies(hey, I actually got it working now (again) ) Odin, JM1, JPK etc.

As mentioned, I bought the phone in China and I have no idea if it is branded (with Google printed on the back cover) has been unlocked, but I suspect it has. It has been rooted (I have a little black ninja guy giving Superuser Permission) and there is a folder-like icon named "root(and some Chinese letters)"
Well, as I said I have Kies running again. First it was running fine then it stopped connecting to the phone and now after unmounting the external SDcard I can again access the phone from my PC.
Through Kies I can do a firmware update. But should I?
Will it be re-locked?
Will it get all the Chinese stuff back?
Will it somehow be converted into a European phone?
Should I wait for the official Froyo or just go ahead and update?
I can update again when the Froyo finally arrive?
Do I need to make backup of any of my "system" files before doing anything?

If you can do an upgrade through Kies it will aslo tell you what the update is (JG2 for example) since you have what I gues is a chine salescode, you will probably get a chinese update .. What you can do, is goint to the devlopers section and read the topic about spoofing your productcode in the registry so Kies thinks you have phone from another provider / country than that what you have now
I am almost certain that if you can enter an old danish firmware in the registry and a danish productcode you will get offeren a new new danish firmware through kies ..This will not relock your phone ( if it was locked before) as far as I know only the froyo builds will do that.
I have been reading some more on the forum and found that the phone is actually branded.

I have also checked out the 3-button combo which seems to be disabled on my phone. I'll get this fixed before doing anything.
So I want to update to the froyo release and will probably be uding the Kies hack to do this. I'll use the XEE code which I believe will give me the danish language as an option.
Do I need to make backup of some of the system files before doing this?
In some poste there is talk about backing up some system files before upgrading as there is some information which is needed to unlock the phone again.
Well. I am still investigation this issue.
Now I am looking into using odin and firmware from samfirmware . com. Probably to JPA or JPO? Then I have been reading about the DocRambone ROM and will probably try that.
However they suggest to "- Check Simlock and Network lock is OFF *#7465625#". When I do this I am promted with a "Rejected" message.
Can anybody please tell me what this means?
I do not want to start messing with it before I know that the phone will not be locked after flashing to new firmware?
If it will be locked then what is the procedure of unlocking anagin. I have already made backup of the "nv_data.bin.md5" and the "nv_data.bin". Having these files is the same as having backup of the /efs? Reason for asking is that I cannot find /efs on the root of my phone.

I bought the phone from a store in Greece and not from an Operator and i use it with Greek Op... When I bought it, about a month ago I did an OTA update to the version 10h...
My questions are:
1) Is it safe to do a manual update with an Euro Open Version or a Greek Version for v20a or i'll have to stay with TMO (which i think it means T-Mobile)?
2) Will that change the operator in my phone and what other changes are made (except from the s/w version changes. for ex does it change the target_country?)?
3) From the store i bought it they said that I have full waranty from LG Hellas for 2 years. If I can and do the update to the Euro Open or Greek V. will I loose the waranty?
4) If I can do the manual update can you provide me a link with the steps to do it?

Yes, and no, if your currently phone software is online aka http://lg-phone-firmware.com/index.php?id_mod=15 and you can download it and flash it then you have no worry about warranty, but if isn't and if you flash v20, and in the meanwhile you need to use your warranty..then you cant go back to latest stock software for you phone and maybe you have problems than..because you cant use recovery phone in lg tools for reverting to stock for two reason: Obviously there isn't jet JB for your region otherwise you would not post these questions, and second if you update manually to v20 only way to reverse to stock is to use different method (downgrading) also included in link above(problem if you dont have matching v10h software if you have some branding apps included). 1) Software-wise it is safe. It is also possible to go back to LG-P880-V10h-NOV-19-2012 if you want to later.
2) It won't change your operator. Also, your phone should remain linked to Greece (or perhaps Germany as that's in your build.prop) and T-Mobile by IMEI.
3) I don't know whether the T-Mobile version has additional software installed, but it seems likely. They should be able to tell that that software is missing. If you don't have any specific T-Mobile software on the phone they probably cannot tell the difference after you go back to LG-P880-V10h-NOV-19-2012. Of course you can be smart about it and make a CWM-backup + Titanium Backup of ALL your apps so you can restore everything after reinstalling LG-P880-V10h-NOV-19-2012. In that case they cannot tell the difference. Note: You need to then also remove CWM and root after the restore before you send it in for repairs.

Fortunately, the rom he has is standard, so he just needs to worry about potential extra apps. Root+Titanium backup should cover that, as he can reflash->root->restore all apps+data with Titanium Backup->remove root.

Install More Locale 2 from the Play Store to translate most of the phone (everything except the system menu I believe)
Alternatively root it, install safestrap, and run Mentor's ROM for a stock based ROM with French language. Alternatively CyanogenMod or AOKP if you prefer a totally custom ROM.
Instructions for rooting and installing a custom ROM are in the post linked above.
So in a nutshell, I was sold a TW version of the device, and all the language settings and everything else is set default to Chinese. I'm too lazy and impatient to return and buy a new one, so the option that I'm left with is to install over my firmware with a US (or UK, or Canada, Anything English really) version on my unlocked phone.
It's half a language issue, the other half is out of spite. I get that I can just change the language settings, but I did and chinese is still stuck here and there in loose corners, and practically unchangeable. Thing lost its warranty when I bought it, so I'm willing to go for broke and flash it now

You have D5833, not D5803 so you probably can't flash it. Worse yet, all the devs probably have D5803 so you (and I) may end up with minimal support going forward. Fortunately, it's a good phone on its own.

I'm new here so I can't post links...so you can Google for XperiFirm, use it with Flashtool by Androxyde.
With XperiaFirm you download a Generic Australia (D5833) firmware. Then use flashtool to create the .ftf file and flash your phone. Hope this helps.
I did some testing with my S20 FE 4G Snapdragon and some disaster. So I downloaded via Frija the latest Italian firmware and flash it via Odin. The Sim is active and yet I always end up with a firmware that looks Russian, when I first restart the phone and the selection of additional Samsung apps to install appears they are all in Russian and then among the bloatware I find a Russian folder with Yandex and other apps that I can't even uninstall. I've tried the same firmware from different sites, even one more less recent, but nothing, I'm always in the same condition. How is this possible? And above all how can I flash an Italian firmware or at least one without Yandex and other Russian apps?

total guess but maybe it's a multi CSC rom you flashed and as far as the rom can tell (based on what it's expecting) your SIM card is being seen as Russian.
take the card out and reboot, see what you get then!

It's as you say, the phone is European (the seller had told me it's Italian, whatever).
The firmware for many countries is always the same and and when I turn it on after flashing the correct CSC is not recognized for my phone.
I tried everything: older firmware, flash with sim, without sim, dozens of factory reset with and without sim. Then also to use via phone a code + imei (as many guides explain) and also to download google phone and try to change csc with that, but nothing to do.
I've read that other people have the same problem, I understand that it's an additional block created by Samsung to prevent the phones from being de-branded or used in a different place than where they were purchased.
The only thing you can do, apparently, is to buy credits for the Samkey software which should fix the problem. For this phone it is needed 10, we're talking about 30 euros. In all sincerity I don't care and I keep it like that, especially since I managed to flash the Indonesian firmware so I finally have native call recordings, then if I ever sell it I'll reconsider...
