Building a custom Android telephony application that will send simple signals on call received to an arduino. No voice data, just simple data to flash lights, etc. From both a hardware and software point of view, which option will be both the easiest and most reliable to implement

Or are you trying to access things on your LG from your Wii?
If you've softmodded your Wii then applications like WiiMC will let you access SMB shares. As the LG 2X is DNLA compliant I'm sure you;d be able to network the two together although I haven't tried yet. I believe that's what the SmartShare program is for that comes as default on the handset.
I am trying to use my phone as a wifi hotspot for the wii so I can connect the wii to the internet. I tried the hotspot function on froyo but it only support ad-hoc, so was wondering if there was a app that supports infrastructure mode.
I know there is a app for the droid, just wondering if there is one for the optimus?
If someone could port the droid app, that would be fantastic.

I can guarantee you that this will never work on the Gtab; not due to software limitations but hardware. The Gtab does not have an IR port which is the only way a remote can interact with a standard cable or satellite box.
Bluetooth or USB ir?? Bluetooth preferably....

With the feature of being able to connect to wireless displays in 4.4, does anyone think there would be a way to make the chromecast act as a wireless display so we can stream our phones/tablets to our TV?

Search this forum for Miracast, you'll find some helpful posts on this.
Chromecast is built around a different protocol at present - discovery and launch, aka DIAL.
You can do with varying degrees of success from a PC.
Samsungs and HTCs have had it for more than a year provided you use their specific adapters.
Going to attempt to build my own car radio using a pi 2 I want it to run android and have GPS, WIFI, FM, Bluetooth. Can anyone recommend some good components to use that will work with android. Is there a good FM receiver that works with pi2 that can use the factory car antenna? Also is there anyway I can get the android OS to shut down from the ignition switch power? I plan on using a 7" touchscreen mounted in the dash are there and with at least a 720p res? Also anyone know where I can find a double din enclosure for all this? I probably end up fabricating one if there not easily found.

That switch should work, what os are you planning on running? A simpler and less expensive option might be to mount a tablet (a used nexus 7 first gen can be found for under $50, and already has everything included, gps, wifi, bt etc). If you're set on using a pi, there's lots of resources on using a PI as a carputer.

I have a raspberry PI 3 (model b) with all necessary accessories and different sensors such as (DHT11, BMP 180, MQ-2 etc.)
So far I have managed to install Raspbian OS and log-in to PI using Putty via Wi-Fi (as I don't have external screen)
1. Is it possible to connect many sensors let's say about 3 to 5 to a single breadboard connected with raspberry PI 3?
2. Once the sensors are added successfully is it possible to collect and send data to the android app? Let's say if I create a very simple looking android app and then I can see the temperature directly from the sensor on phone?
I know there are different IoT platforms that allow sharing data in the cloud, but I want to build everything from scratch.
I am a beginner on this, so I am still studying and reading but would appreciate if someone could give me some guidance where to start.

you can use and adruino and a bluetooth module to connect it to a raspberry pi and build an app to receive and display the data from the sensors. building one myself for a project.

Raspberry pi and arduino are connected via a simple serial usb cable that comes with arduino.
It uses PubNub as the server and arduino and Android phone are connected to internet.
why not just RDP or use JuiceSSH for viewing remotely
