I somehow managed to find an old version of Google Camera that work. You can only use for taking photos.
Hope it's work on device too.

Same happened to me after 9.2 update. I've changed ROM since then. Wish there's a fix come soon.
same here i am having this issue since late december updates(using global beta ROM) i have posted this issue on miui forum but got no answer.
if anyone knows that'd be great, because i want use google camera ported camera but since google camera have bugs like recording video and it crashes sometimes and takes longer time to process hdr+ pictures and MIUI camera comes in handy to shoot videos.

The versions that work in principal where only able to access the main camera module (1x) and the 5x module.
The results are better than from the stock camera app (what is not so hard).
The only camera app I found that was able to capture RAW/DNG on all modules was ProShot but in the latest version 8.4 the access to all modules is broken.

I am running xiaomi.ru Rom on my Mi 11 Pro and pretty happy with all.
I am using a Gcam mod for taking pictures since I prefer the look.
Is there a way to set the Gcam camera as standard application for camera? I can't select any other camera app in the standard app lists of MIUI.

Due to android limitations starting from 12. you can't easily set your camera app as the default anymore.
you might be able to poke around and find a way.
not a helpful answer but to me it does suck that Google took away that option.
