So I found this website that has a procedure for Rooting the Note 8 running Android Pie.
It does not list what variant of the Note 8 this will work with (EDIT: this root is for the 950F, and the relevant file has been taken down)
Has anyone tried this process?

How to Root Galaxy Note 8 on Android Pie and Install TWRP
Open Odin3.exe and add the TWRP Recovery.img.tar file. First of all, open Odin.exe on your computer. In Odin, click on the AP tab and select the TWRP.img.tar file. Now go to Options tab in Odin. Make sure that the only option checked is “F.Reset.Time”. All other options should be UNCHECKED.
Boot your Galaxy Note 8 in Download Mode. Power down your Galaxy Note 8. Now press and hold Volume Down + Home + Bixby buttons simultaneously to boot up. As your phone shows a warning, press Volume Up to continue.
Connect Note 8 to the computer and flash TWRP. Now connect your phone to the computer. As Odin shows a Blue light in the ID:COM box and “Added” in the log box, click Start. This will flash TWRP. After TWPR flashing ends, DO NOT REBOOT your phone. Disconnect it.

All done. Reboot into the System now. After flashing the file, go back to the main menu again and tap Reboot > System. This will reboot your phone into the system now. You will have the Note 8 rooted with TWRP installed. That’s all. Enjoy!

This is how the TWRP looks like. Don’t have an SD card? Here’s what to do
In case you do not own an SD card, you can skip copying files to the external sd card. Follow all the steps from Step 1 to Step 4. After step 4 when your phone is in the TWRP recovery, connect it to the computer. As the mount is working now, you can copy the OEM Issue Fix file directly to your Note 8. Just copy the file, disconnect the phone and follow step 5 and 6.

Thanks to our friend Dr.Ketan for developing the OEM Fix + Magisk file."
Dr. Ketan's original XDA thread:
https://forum.xda-developers.com/galaxy-note-8/how-to/guide-how-to-root-note8-efs-backup-t3677038
Dr. Ketan's rom in the link is for a Samsung Exynos 8895 Note 8 and therefore wouldn't be compatible with U.S. Note 8 Qualcomm Snapdragon 835 chipset. Seems that America "the land of the free" has become the land of the locked bootloader. As for rooting the Sprint Note 8 on Pie, to my knowledge a successful root method has not been achieved. Perhaps VMOS and /or VirtualXposed are alternatives that might provide some root capabilities on a non-rooted devices. If someone find this to be helpfull, you can hit me up with a like. Thanks

Samsung Electronics Co Ltd’s (KRX:005935) new Galaxy S5 smartphone can now be rooted using the CF-Auto-Root tool, developed by Chainfire, a recognized member of the XDA Developers forum.
Rooting a device allows users to get complete access to the device’s operating system to make changes to the file systems. In order to root the Galaxy S5 running on the latest Android 4.4.2 KitKat, users are required to flash the CF-Auto-Root file in the smartphone.
Users will have to download the appropriate CF-Auto-Root package for their Galaxy S5 models. Users can check the model number by going to Settings > About phone > Model number.
Here are the download links to CF-Auto-Root packages:
Points To Remember Before Rooting
- Users are recommended to back-up all data before rooting the device
- The device should have at least 80 percent charge left on the battery
- USB drivers must be installed on the computer with USB Debugging enabled on the device to transfer files between the phone and computer
- Users should ensure they are using the correct root package for their device

Steps:-
1.Download and install Mi Flash Tool on your PC from HERE.
2.Download the full Fastboot Miui Rom for Mi 3 or Mi 4 From HERE and save the file on your desktop.
3. Extract the ROM File on your C:/ Drive (Don’t extract the folder on your desktop)
4.Run MI flash tool on your desktop, the same file that you downloaded in the above step.
5.From the tool click on the ‘Browse’ button and select the image folder of the ROM file that you extracted on the C:/ drive.
6.Click on ‘Browse’ option again and Advance and Choose the “Fastboot script” from the extracted ROM folder.
Choose the script carefully as per your need:-
1.flash_all.bat: clears all the data of the built-in storage, clear all user data, please be careful!
2.flash_all_except_storage.bat:
will erase all user data does not clear the built-in storage data.
3.flash_all_except_data_storage.bat:
does not clear the built-in storage data does not clear user data
(I would recommended using the flash_all_except_storage.bat since this will wipe and flash everything but the virtual sdcard.)
7. After this, Turn off the phone, press the Volume down key and the Power button at the same time to enter Fastboot mode, then connect the phone to your pc.
8. Now click on the ‘Refresh’ button and you will see the device on the tool list.

I would like to thank TeamWin for their amazing work!
I saw that the newer Samsung MediaTek phones were not getting any sort of love, so I bought one myself to kick start the development.
TWRP is the obvious choice as it is reliable and trustworthy with frequent updates and patches.

TWRP Recovery is compatible with latest Android 11-12 firmware
tested on:
M325FXXU3AUK1, M325FXXU4AVB1 ,M325FXXU4BVI2 as well
First time you boot into TWRP, don't forget to backup your EFS, Secondary EFS and NVRAM! Go into Backup and select "EFS,", "Secondary EFS" and "NVRAM" and backup to preferably MicroSDcard and copy it to your PC in case you need it if IMEI corrupts.
