Yes, but your root and recovery will be gone and you'll have to redo the root again. Unless you have Orangefox recovery well installed which has the ability to survive OTAs

Will this work with the soak? Also doesn't really address the issue since the soak will require all the native apps and such to be present.

IF all you care about is the new OTA, and you DONT wish to keep root access, which the new OTA prevents then just Flash the stock firmware file with RSD LITE per the thread. If you however want to RETAIN root, and be on the new OTA update, then follow that link, which will allow the OTA to be applied to your phone, while you keep root access.

Whats the difference? Is the soak test still not an OTA just pushed out to a select few?

No it's possible.... But very hard they had some bootloader locked phones rooted and with twrp ... But the last few have been no go...s9 still isn't rooted... You need to find a exploit that allows you to get su access and sadly most of the people that were doing such things now make money with the phone manufactures on the other side.. Keeping phones locked down

My phone is trying to force me to update to: G973USQU2ASG8 (i have sprint snapdragon).
Is it ok to allow this update and still be able to unlock bootloader later?

There is but only for China and hongkong snapdragon.
i have unlocked boot loader,rooted and intalled exposed and iam still have Working L1 but play protect is not verified

And can i get certified again by flashing stock rom and relocking bootloader again
