When I load up taskiller, sometimes I will see apps open that I haven't even used for several days. Why do they do that?
They run as services.
What "running as a service" means
Services do things periodically, usually pretty often, like load your sms's and update your email, show something on your home screen as a widget, or know what time it is so your alarm clock goes off. In order to do what they do, they have to be running something, so they run in the background as services.
Try looking in the Market for Advanced Task Manager, or Close Everything. Both of these will close anything that's not needed as a service, but be warned, it'll shut downsome things, like Locale, Autolock, or Owner Info too unless you check them off as exceptions.
i have advance task manager and in the processes tab shows a few things is there anything there i can turn off?

After i turn on my phone i use Taskiller to close all the Apps that are running in the background but when i check a few minutes later some of them are back. Is there a way to stop them from starting by themselves?

You can use TaskPanel to have it automatically close them when they open
doing this might drain your battery as you said the apps always open after you close it. so if u have an app that keeps closing it everytime it opens, itll just be a constant cycle, drain battery, slow down performance, etc.
some apps that open after you close may be essential to the android process, like dialer, calnedar, gmail storage, im, etc.

Quoted for truth. You are experiencing one of Android OS's features - it will restart essential apps and systems that are necessary for proper phone operation whenever they crash or are manually terminated.
A lot of times I will get random programs that I never use listed as open in the task manager. Mp3 store, nba league pass, documents to go, they all keep opening up again even though I never use them. Is there a reason for this? There are other apps that do this too, I just listed the ones I see most often.
Yes, this is normal. Android loads applications until the RAM is almost full, so they're ready to pop up in an instant when you actually launch them. If an application requires more RAM to work with than available, the system will shut down some of the inactive applications.
There are those task auto-killer programs out there that people use because they think it makes their phone run faster or tidied up, but in fact, most of the time they will slow it down because applications will take longer to start. And consume more power, because there's more work to do when starting an app. A properly written application won't consume any power when inactive, and the RAM has to be powered anyway, so that's why you want it to be used as much as possible.

Is there anyway to exclude certain apps from opening up? There are apps on the phone like mp3 store or the stock messaging app that I would never use, so it would be more worthwhile to get the system to keep apps I actually use open instead of just random ones.

Why do several apps randomly start up?
It feels like I constantly have to open task killer and kill over a dozen apps even when my phone hasn't been touched since the last time I killed almost the exact same list of apps.
Att Navigator, stocks, countdown, etc. seem to be the regular culprits. Any help with this situation would be awesome.
I've noticed the same thing on my Aria. AT&T Navigator always restarts by itself and I've never even used it. So I just set ATK to auto kill.
Look at the sync settings and you can disable things you dont need (News, stocks etc)
A "Running" app behaves differently on android. The app may be "Running" but it is also "Sleeping" which means that it may not be using any resources (battery, cpu, etc).
Using a task killer may actually be hurting your performance and battery life.

I just check the running apps on my Aria and I understand why every single one is running. AT&T Nav is NOT running. You should check all the widgets you are using, having the widget on the home screen start app automatically.
If you're rooted....
I can't tell you why it does it, but I can tell you how to stop it. If you're rooted, spend the $.89 (approx.) for Autostarts. One of the best programs I've installed.
I was having the same issue, I use AT&T Nav, but it always seemed to show up on the task list even when I hadn't started it. For whatever reason, it's set to start whenever you get a text message! With Autostarts I was able to stop it (along with many other things).

One caveat to this, BE CAREFUL. This is a powerful program and it will let you stop just about any service/program on your phone. You could really do some damage if you don't watch it.
I been using Advanced Task Manager 4.1 before I updated to froyo and it killed all my unwanted apps very well. All the roms I tryed on 2.2 do this: they leave the apps connected to the internet open. It just wastes my battery. I tryed a bunch of other task killers and none of them work, the apps still stay open. I need to kill the apps untill the next time I open them. Anyone know a way to do that on 2.2 or what my prolem is?
Might want to state what your problem is or ask a question

For one thing you might want to download DroidWall and disable internet access to all unwanted apps. It is like Firewall for your android.
Also try Taskiller. I m using it and it kills apps and never let them start until screen turns on again.

See thats the thing, I want them to be off untill I turn them on myself. I think I'll re-download DroidWall (I have known about it) and all task killers do the same thing I guess, which is kill the apps untill the next time you turn on your screen =/
Could you give us an example of these apps that are "staying connected" and some indication of what you're testing to know that they are staying connected?
Apps like: Bloo (Facebook), Hi IM, Android Market, Weather Bug, & others that dont use internet like Astrid Tasks, Startup Cleaner Pro, Titanium Backup, TeslaLED & toggle apps.
I just want them closed when I kill them. Right now I have a shortcut to managing apps so I click on the running tab and manually force close them but thats a pain.
INDICATION: killing weather bug and the notification with the temperature stays.
After killing the apps I have listed they pop up again in the task manager 30 seconds later.

I am really confused as to why some apps show to be running in
settings---manage applications--running services
like for example contract killer, office suits, lets golf 3d, NFL pro 2012
knowing that i did not even turn them on, so when I press stop those apps, after few minutes they show up again in running services.
Why is that?????
Most apps have 'listeners' that listen for events. When this event occurs, they are woken by the OS to do whatever they want to so. This is why so many stock apps are impossible to kill, they just start up again.
I use Android Assistant to stop apps starting at boot, and Autorun manager to disable all listeners for apps I do not want active. I think Autorun Manager can do it all itself, however, but I bought AA first.
I kill all things I do not like such as WiFi sharing, Bluetooth sharing, Social and Music Hubs. Be careful not to kill services that are required!
You do need a Rooted phone for this to work, however. It was my main reason for rooting once again. It is well worth it, and not as riskly / tricky as flashing a custom ROM. Be aware you may need to 'unroot' to get OTA updates and warranty fixes.
I also use droidwall to prevent apps getting to the internet by GPS, WiFi or both. That makes me feel a lot safer!
Overall my battery life seems 50% greater, and my mobile data access is about 50% less.
