Please could anyone advise on a tool to save WiFi settings (keys + SSIDs) and/or copy them so that they can be re-applied when you flash a new ROM?
Can UC do this?

UC does do that and a whole lot more. It's a matter of exporting the reg keys and adding them to your provisioning xml.
Does anyone have a 6.5(.3) cpl file which lets you specify the input options? My ROM didn't come with one.
It's the Settings > Personal > Input that's missing.

try this for Input Options...
Try this and let me know if it works for you...
- Backup your registry
- Go to [HKEY_LOCAL_MACHINE\ControlPanel\Input]
- Remove the "Redirect" value
- Soft Reset
- See if Input Options is there
- Post your findings

Ever since the 20/11 file, the APN settings do not load yet the .xmll file is there & appears intact. I've tried making a copy & reimporting the /system/etc/apn-conf.xml but that doesn't have any impact either.
I would post this on the developers section but I'm not allowed at the moment

I tried to make an edit to swap the menu & back button, but no go. I was trying to edit just like I did with my Note 2, but it doesn't work. Has anyone tried and had success?

I want to switch on the network connectivity speed display. It was in the settings panel earlier, but now it disappeared.
Or maybe not completely. If I search in the settings I can see that the option exists, but when I click on it, it's hidden... (See the PIC attached)
I'm guessing there is a option in a deeper level where I can set it.
Does anyone know a solution? My phone is rooted, so if it requires editing some config files, I'm all for it.

So i have rooted my device via your method and after reinstalling lolipop i found that the setting was stil missing. I however noticed that if you installed the lolipop update from the vodacom version posted here (http://forum.xda-developers.com/ascend-p7/general/huawei-p7-l10c02b817-android-5emui3-1-t3207363) it was there again. Unfortunatly for me there is some bugs in that update, there is no keybord app. I then started searching for a way to edit the system wide prefrence database file, where i also found the entry located inside the settings.db file , but it is not possible to edit it without corrupting the data for further use by the phone.

with root edit data/cust/prop/local.prop
find this line:
ro.config.hw_hideNetworkSpeed=true
and change it to
ro.config.hw_hideNetworkSpeed=false
reboot
Now there is a new setting entry in display section
