Will custom ROMs, specifically GrapheneOS, ever come to Samsung Galaxy S21 Ultra devices?
Don't hold your breath...it's highly unlikely for custom roms (i.e. non-one UI roms) to appear on Samsung devices...

As far as I have seen, no, there are no aosp roms for note 8, I think it is really pointless to convert a note series device into a simpler samsung featuresless device, to that intent, you could have gotten a much cheaper device, or pixel to that effect
Recently a complete device tree was developed for all of the S20 family (except FE).
Many custom ROMs most of them went official.
Apparently, S20 FE has some different hardware ( WiFi chip and others) that prevent cross development and flashing.
What can regular users contribute with to help with the process that would make us catch up with the progress made with S20 family?
If anyone releases free bootloader unlock for (S20 FE Snapdragon US models), I think the development will be more available.
I'm not sure what the current state of play is nowadays but I've had phones where Verizon and Sprint bootloaders were locked but development was plentiful.
if a phone is very popular it'll usually attract support.

Mostly there is a way to Unlock the Bootloader as far as I know you can Unlock the Bootloader for this Device
I'm Currently on SM-781B and the Bootloader is Unlockable, Correct me if I'm Wrong
for the first few years, while Samsung is supporting this phone surely the most stable, fully functional roms are going to be ONEUI based ones.
strip out all the Samsung, Microsoft and even a few Google apps. keep the camera algorithms and the 120hz as is but maybe swap the kernel to add a few features and workarounds etc ?
I'd love an AOSP rom on this phone but my experience has been the further you stray from the base firmware the more there is that never quite works right.
Hi does anyone know if the Exynos Galaxy S21 Ultra will be getting any other third party roms (EG : Pixel Experience or Lineage OS) in the near future? As I’m getting sick and tired of One UI. I do understand and acknowledge that rooting and modding android devices are more complex than prior devices but it would be nice to be rid of One UI on a great android device like the Galaxy S21 Ultra.

Most likely since it may take some time. I am using S9+ and it's still getting ROMs even today. The same goes for S4 as well.
i just dont get it cheaper phones like the poco x3 pro got pixel experience lineage os officially while the a71 a more expensive phone has yet to get one that is why i got a x3 pro the support from custom rom devs most samsung phones have unofficial or bad custom roms for eg pixel expereince the latest samusng phone to support it is the s7 edge do custom rom devs not care about samsung i dont get it ? every poco phone has lineage or some other rom

In case you haven't been keeping up with the Samsung scene, it seems they implement more and more stuff to discourage custom ROMs and rooting. It started with Knox and then stuff like RMM locks. Now, Samsung is trying to disable your cameras on newer phones if you ever unlock the bootloader, which is pretty anti-consumer and anti-dev. That's the main reason you don't see a lot of newer Samsung development, because it's just not worth the hassle.
I agree with ShaDisNX255. The harder you try, the worse it gets. not worth it.
