In the settings (phone->data tab) the option - Disable GPRS/3G option on sleep
does it mean then I stop using the device and puch the turn off buton to switch off the display it is a sleep mode? so the GPRS connections will be terminated (if any)? what about wi-fi?

It's not possible to do it automatically...
But you can use AE button plus an set a double clic on Volume Up (for example) to switch On/Off the wifi...bluetooth or launch a special program...

On Sleep mode my phone stops using wifi and goes back to the dataconnection. I have prepaid so I want it to remain on wifi all the time.

Unless you're talking about staying connected to the network. Mine always d/c even if my wifi is on and it won't automatically connect either.
How to prevent wifi from sleeping?
I have a few apps that have the permission of "prevent phone from sleeping" but seems the phone will still switch off the wifi soon after the screen timed out. Is it supposed to work like this, or is there some settings for this?
one of the apps i tried is "wireless file transfer lite", which by the way, is a very light wifi transfer tool between phone and pc

I've been playing with Bixby Routines and can't figure out exactly how they work. For example, if I have a routine called At Home that says:
IF wifi connected to "mynetwork"
THEN turn off bluetooth, turn off auto-sync, phone lock off
Now, if I am at home (and connected to the "mynetwork" SSID), everything works. But if I leave home and become disconnected from "mynetwork," does this routine toggle those settings? The only IF action available is "Connected to..."; there is not a "Disconnected from..." option. If this routine doesn't toggle those settings, how do I create a routine that acts when the wifi connection is broken?
